Appleton Special Rum Cake
Ingredients:
Cake: 1 cup chopped pecans
1 (18 oz) pkg. yellow cake mix
1 (4 oz) pkg. vanilla instant pudding
4 eggs
1/2 cup cold water
1/2 cup cooking oil
1/2 cup Appleton Special Rum
Glaze:
2 oz. butter
2 oz. water
1/2 cup white sugar
1/4 cup Appleton Special Rum (amber colour)
Method:
Cake:
Preheat oven to 325 F. Grease and flour a 10" tube or Bundt pan. Sprinkle nuts over bottom of pan.
Mix all cake ingredients together - batter will be runny. Pour batter over nuts. Bake about 1 hour. Cool. Invert on serving plate. Prick top.
Glaze:
Melt butter in saucepan. Stir in water and sugar. Boil 5 minutes, stirring constantly. Remove from heat and stir in rum.
Drizzle glaze over top and sides, allowing cake to absorb glaze. Repeat until all glaze is used up.
(This cake freezes well. Can be made in 2 loaf pans which makes it easier to slice and serve.)
