I'll eat anything from the sea....errr make that be almost anything [img]/forums/images/graemlins/laugh.gif[/img]

I got a bag with some frozen squids.. What the heck am I suppose to do with them? Do I take off the head use only the body and do I remove the body filling and just use the outter part?

Mi neva nyam squid but dese yah look good.
Yu haffi clean di squid, head an tenticles aff, lef di body, dats di pawt yu cook. Skin and clean di body and it leave wan whitish tubular looking piece, wash ei with sum lime juice, rinse and dat is wat yu cook.
See wan recipe yah:

Squid, Fried Plantain and Mango Salad with Fresh Mint & Smoked Chile Vinaigrette

Ingredients:
2 cups peanut oil
2 green plantains, peeled and sliced very thin
8 whole squid, skinned and cleaned
Pure olive oil
Salt and pepper
2 ripe mangoes, peeled and diced
4 cups arugula leaves
1 red bell pepper, seeded and diced
8 fresh mint leaves, cut into chiffonade

Method:
Heat the peanut oil in a large skillet over high heat to 375 degrees F. Fry the plantain slices in batches until crisp. Drain on paper towels and reserve. Heat a grill or grill pan. Brush the squid with olive oil and season to taste with salt and pepper and grill for 3 minutes on each side. Cut into 2-inch pieces.

Mint-Smoked Chile Vinaigrette:
Ingredients:
1/4 cup rice wine vinegar
1/3 cup extra virgin olive oil
1 teaspoon pureed canned chipotle pepper
1 tablespoon honey
1/4 cup fresh mint leaves, cut into chiffonade
2 tablespoons chopped cilantro
Salt and freshly ground pepper

Method:
Combine all ingredients in a blender and blend until smooth. Season with salt and pepper.

Assembly: Toss the squid, mangoes and arugula with the vinaigrette in a large bowl. Heap the salad onto a large platter and garnish with the fried plantains, red pepper and mint leaves.

Yield: 8 servings
Prep Time: 20 minutes
Cook Time: 20 minutes

Cayenne-Spiced Fried Squid

Ingredients:
1 pound squid, cleaned and sliced
2 egg whites
3/4 cup all-purpose flour
1 tablespoon (or more to taste) cayenne pepper
Oil for deep-frying: 4 inches of neutral-flavored oil in large heavy pot
Lime wedges for garnish

Method:
In a medium bowl, combine squid pieces and egg white, mixing gently but thoroughly. Sift together flour and cayenne. Drain squid. Heat oil to 360 degrees. Working in batches, drop a handful of squid into seasoned flour and toss to coat evenly. Lift out of flour, shake to remove excess, and drop carefully into hot oil. Cook briefly until golden, about 1 to 2 minutes. Remove squid from oil with slotted spoon and drain on paper towels. Repeat with remaining squid until all are cooked. Sprinkle with salt and serve with lime wedges

Yield: Four appetizer servings
