Pecan Dream

2 cup pecans
1 cup sugar
1/4 cup orange juice

place all in a micro wave dish,stir,nuke for 6 mins. remove stir again, replace an nuke for another 6 mins,pour on a buttered foiled baking sheet. break apart when cooled enough to handle.enjoy

hi Misty,girl mi nuh knoh if anyting really dat easy,but see a recipe here,i made it up myself an have had great compliment on it.

Wedding Cake (Black Cake)

2 1/2 cups currants
2 1/2 cups raisins
1 1/4 cups prunes
1 cup dates
1/4 cup cherries
1/4 cup peels
3 cups port wine
1 cup dark Jamaican rum
1/2 cup white Jamaican rum
1 lb butter
2 1/4 cups brown sugar
9 eggs
3 cups flour
1 tablespoon mix spice
1 teaspoon cinnamon
1/4 cup blue berry jam
4 tablespoon brandy
4 tablespoon port wine
1/2 to 1 cup dark Jamaican rum
browning

place first 6 ingredients in a large glass bottle,add wine and rum,close jar and leave for 2 months at least. cream butter and sugar in a large bowl. beat in eggs,sift the mix spice and cinnamon with the flour.add port wine and brandy to creamed mixture,add flour mixture. Chop the soaked fruits in blender, add to mixture,add browning to give a good brown colour,add enough rum to the mixture to give a consistency in which the fruits almost drown. pour into a well lined and greased tin, bake at 250 degrees on low shelf for about 4 hours, insert a skewer in center of cake should be clean if not bake longer.

Now if you want the three cakes triple the first 6 ingredients, and just separate in thirds after. any problem let me know its very easy.

i like to bake at least 2 weeks in advance ,so i can damp with port wine every 2 days or so.

(((Grandma))) (and anyone else) here is one of the two recipes I promised. I am typing up the other one. I hope you enjoy it. It's delicious, especially with a cup of tea at night after dinner.

Cranberry Fruit Nut Bread

1 cup of fresh or frozen cranberries coarsely chopped
1/2 cup chopped nuts
1 tablespoon of grated orange peel
2 cups of all purpose flour
1 cup of sugar
1 & 1/2 teaspoon of baking powder
1 teaspoon of salt
1/2 teaspoon baking soda
2 tablespoons shortening
3/4 cup of orange juice
1 egg, well beaten

Preheat oven to 350 degrees. Generously grease and lightly flour a 9" x 5" x 3" loaf pan. Prepare cranberries, nuts and orange peel. Set aside. In a bowl mix together flour, sugar, baking powder, salt and baking soda. Cut in shortening. Stir in orange juice, egg and orange peel mixing just to moisten. Fold in cranberries and nuts. Spoon into prepared pan. Bake 60 minutes or until wooden pick inserted in center comes out clean. Cool on rack 15 minutes. Remove from pan, cool completely. Wrap and store overnight. Makes one loaf. This bread freezes well too.

This recipe has been a holiday tradition in my family for years. There are no precise measurements. It's one of those that you make according to how many people you are serving (so use your judgement and alter accordingly.) Warning, it is VERY fattening and sweet, but around the holidays, who cares, right? [img]/forums/images/graemlins/smile.gif[/img]

Candied Sweet Potatoes/Yams

Fresh sweet potatoes / yams - (those orangey color kind)
Pancake syrup
Brown Sugar
A can of Coca-Cola (or any cola)
Butter
Salt
Cinnamon (optional)

1) Wash and peel sweet potatoes, cut up into either length-wise or round 1 inch thick pieces (doesn't matter)
2) Boil in lightly salted water until almost cooked but not completely
3) Rinse under cold water and drain
4)Arrange on a greased baking pan and cut up pats of butter (or you can use that Squeeze Parkay in a bottle) and place on top of potatoes.
5) Then pour pancake syrup all over potatoes until the bottom of the pan is covered.
6) Pour can of cola all over potatoes also. Sprinkle cinnamon & brown sugar if you desire. Bake in oven.

While they are baking, check them from time to time and spoon the gravy from the syrup over the potatoes so they don't dry out. Bake until they become golden color and are soft when you insert a fork or toothpick. (Personally I like mine baked until the edges of the potatoes are almost burnt crispy. Again, there is no set time, if you like firm potatoes, don't bake them that long or if you like them softer in texture, bake them longer.

Jsg here is my recipe for the peanut brittle, now i change the original cause it wasnt workin for me so here is the end result

Peanut Brittle (micro wave)

1 1/2 cups dry roasted peanuts (mi get de salted too)
1 cup white sugar
1/2 cup light corn syrup
1/8 teaspoon salt
1 tablespoon butter/margarine
1 teaspoon vanilla extract
1 teaspoon baking soda

Grease a baking sheet, and set aside. In a microwave safe glass bowl, combine peanuts, sugar, corn syrup, and salt. Cook in microwave for 7 minutes on High, mixture should be bubbly and peanuts browned. if it isnt return for another 3 mins.Stir in butter and vanilla; cook 2 to 3 minutes longer. the penuts should be light brown the syrup darken. 300 on a candy thermometer.
add baking soda,an gently stir just until mixture is light and foamy. Pour immediately onto greased baking sheet. Let cool 30minutes to an hour, or until set. Break into pieces, and store in an airtight container. enjoy

i add more peanuts cause my kids love lots

G2 thank you for the receipe for Black Cake. But could you tell me what is Peels? The receipe calls for browning..is it the same sauce that I use to make brown stew? How do I cream the butter and sugar? Sorry for the many questions but I am a "baking ignaramous." [img]/forums/images/graemlins/blush.gif[/img] You might haffe to gimme you home number when me ready fe mek dis cake because me have problems meking box cakes. But I am determine to make this cake.
