verdict....rice flour is now where shape or form like wheat flour, in fact it makes a great subsistute for cornmeal in festivals.
i made the mistake of trying to prepare this as i would normal dumplins, ie cornmeal, rice flour, and baking powder. no go the mixture would not come together, had to add three table spoons of wheat flour.
know i know why rice cakes are made and taste the way they do. this flour would be good for anything that you need cornmeal for, if you need to make dough it will not work without something to bind it together. i think using white rice flour might be a better idea.
good thing i had my cookie cutters handy save the day as i was able to stamp out these great patterns with the cutters.
next up soy flour.....Bon Appetite

recently I bought "Celtic sea salt" It is natural and lot's of mineral in it. I am using for cooking now. It's pretty good.Comment

I find it at the Whole Food Store or even at a really nice Chain Supermarket here, where this on actually came from.
This brand is Cerulean Seas and it distributed by H.L. Benndorf Corp. New Jersey. 1.800.257.6174 EXT. 225
The Baking Powder all though it was lost in this preparation, is Featherweight Brand. Cereal Free, Gluten Free, Sodium Free, it even rises better than the traditional brands. Distributed by Hain Foods, New Jersey.
As to whether this dumplin was nice, well I made, so I had to eat it. [img]/forums/images/graemlins/laugh.gif[/img]
It was like festival, so I would use the Rice Flour as a cornmeal subsitute in festivals. Maybe White Rice flour, with less bran would be more like wheat flour.....peaceComment
