Sweet & Sour Pork (Chinese Jamaican Cookbook)
Ingredients:
2 lbs. pork shoulder or rib chops
dash of salt & pepper
1/2 tsp. garlic powder (or 1 tsp. fresh, minced)
2 tsp. light soy sauce
1 egg - slightly beaten
1 cup flour
3 cups oil
Sweet & sour sauce, see recipe below.
Serves 6
Preparation:
Remove fat and bone from pork, cut into 1/2" cubes. Season with salt & pepper, garlic and soy sauce. In a plastic bag, put 1/2 cup of the flour, add pork to bag. Shake vigorously. Dip pork one piece at a time into beaten egg. Add rest of flour to the plastic bag. Put pork back into bag and shake once more. Heat oil in wok. Deep fry pork until golden brown. Drain on paper towels. Serve with Sweet & Sour Sauce.
Sweet & Sour Sauce
Ingredients
1 cup pineapple cubes
1/2 cup vinegar
1/2 cup water
1/2 cup brown sugar
1/2 cup ketchup
dash of salt and pepper
1 tsp. soy sauce
1 tbsp. cornflour (corn starch)
2 tbsp. water
Method:
In saucepan, combine pineapple, vinegar, 1/2 cup water, sugar, ketchup, salt & pepper and soy sauce. Bring to a boil, then turn down to medium. Blend the cornflour(corn starch) into the 2 tbsp. cold water, then stir slowly, a bit at a time, into the sauce until desired thickness is attained. (it gives no length of time to cook the sauce in this book. I suppose 4-5 minutes will do. Maybe a bit more?) Pour sauce over pork and serve.
