Curried Crab
2 large crab
1 teaspoon salt
1/4 teaspoon pepper
1 onion
5 slices scotch bonnet pepper
2 stalk escallion
sprig of thyme
2 cloves garlic
1 tomato (optional)
about 1/2 tablespoon curry powder
(1/2 a can coconut milk optional)
2 tablespoon oil
1 tablespoon margarine water or coconut milk
scald crab and wash thoroughly,limb crabs,remove body from shell and throw away the gall which clings to the shell. lightly fry chopped seasoning in hot oil with curry for about 5 mins.without browning. put in crab and enough water or coconut milk to make gravey about 1 glass. simmer for 3/4 hour add butter adjust seasoning. serve with rice or dumplins.enjoy
Hey grandma2, that is an excellent recipe. what do you think about taking the shells and putting them in cheesecloth to intensify the flavor of the crab(removing it afterwards). Also, swapping out the coconut milk with heavy cream, making it richer? [img]/forums/images/graemlins/smile.gif[/img]
