1 doz. crab
2-3 tablespoon butter
1 onion chopped
1 tomato chopped
2 stalk escallion chopped
1 stalk thyme (just the leaves
1 tablespoon worcester sauce or vinegar
3-4 slices scotch bonnet pepper
salt and pepper to taste
rasping (dried breadcrumbs) for the top
for a good result, the meat of 12 crabs should only be used for 8 crab backs.obtain crabs one day before an feed them good food ex. bread,pepper leaves ect. till purged. place in a large pan an pour on enough boiling water to cover. drain wash crabs an boil for 1/2 an hour to loosen flesh.
remove claws, cut open and pick meat. remove body from shell carefully preserve any eggs and fat but discard the gall which clings to the shell.
scrub shell thoroughly. prepare seasoning and brown in butter.add flaked crab meat,with worcester sauce,salt and pepper.fill shells,sprinkle with raspings and a dab of butter and brown for a few minutes.enjoy
