Anyway, here it is. Remember this is one of those heirloom recipes, that is, adjust quantities according to your taste.
TOMATO BUTTER
5 lbs ripe tomatoes
5 lbs sugar
4 oranges
4 lemons
4 sticks cinnamon (good idea to gather into a cheesecloth bag so you can remove easily)
Scrub and rinse tomatoes and fruit.
Scald tomatoes, one at a time, in boiling water for 15 seconds; peel.
Cut tomato in half horizontally, squeeze out the seeds and juice. Chop tomatoes.
Put tomatoes into a large, heavy-bottomed pot.
Cut lemons and oranges into lengthwise quarters; thinly slice across quarters; discard seeds (do not peel first).
Add sugar, lemons, oranges, and cinnamon sticks to the tomatoes, stir well.
Set pot over high heat, stirring every couple of minutes until it starts to bubble.
Simmer (not small bubbles, about medium-small), stirring about every 15 minutes, for about 3 hours, until a jelly drop forms (when jelly is held on spoon above pot, last 2 drops run together and cut off spoon in a clear drop).
Ladle into clear sterilized jars; process in boiling water for 10 minutes.
