1/2 lb Saltfish
2 oz salt pork (optional)
4 cups water
1 lb Callaloo
2 cups rice
6 cooking tomatis (tomatoe)
1 clove garlic
1 small onion
1 blade escallion (green onion)
1 scotch bonnet pepper (habanero pepper)
1 tblspn margarine
Soak saltfish, remove bones and break up flesh into small pieces. Wash and dice salt pork. Fry pork in large heavy pot until brown. Wash and chop callaloo into small pieces. Add all seasioning except pepper. Add water to pot with porka nd heat to boiling. Add fish, spinach, seasoning and rice. Add whole pepper and margarine. Cover and simmer (25 to 30) mins, or until rice is tender. Serve with slices of potato or avacado.
