Mackerel with Okra recipe?

Hello all,
Maybe Simmy, Grandma or someone else can help me.
Mackerel and okra is something I have enjoyed for breakfast, but have never made it myself. I think that it should mackerel from the tin in this recipe, no? I don't think there's much to it, but if you can help with the recipe I'd be grateful. I've got mackerel and okra in the kitchen right now. [img]/forums/images/graemlins/smile.gif[/img]

PS. I'm going to serve some fried ripe plantain on the side this also.

I love mackerel and okra...so tasty.

I don't have a formal recipie like G2 or Simmy will.

I make it all the time, but I have never used the tin mackerel. I wonder how that would taste?

Some foods I can eat from the can...but canned mackerel...YUCK. Now Salt Mackerel...I cant get enough...Sadly I cant get it around here. [img]/forums/images/graemlins/frown.gif[/img] But when I can get it...I love it with anything.

Okay ladies, here's what I did. I couldn't wait because I was hungry and besides I had the okra a few days already. [img]/forums/images/graemlins/laugh.gif[/img]

MACKEREL WITH OKRA

1/2 chopped onion
1 tbsp. olive oil
14 oz. tin jack mackerel
2 1/2 cups fresh okra
sea salt and black pepper

Saute onion in olive oil. Add mackerel and then coat with onion and oil mixture. Add fresh okra and gently toss with mackerel. Add salt and pepper to taste. Cover and cook over low heat
until okra is tender. Serve with lighly buttered toast or fried breadfruit slices. (I didn't make the plantains after all.)

CONCLUSION: Canned mackerel is not as good as fresh, but for the puposes of this recipe worked rather well and the flavour was certainly more than passable. It held together nicely and combined with the other ingredients, made a pretty tasty late breakfast along with cup of hot green tea and some orange juice to finish.

STILL, I would like to hear from someone else who has a recipe. In the meantime, give mine a try and see what you think. It's very simple.

Mackerel an Okra


1 lb mackerel
12 or 1 lb of Okra
1 onion chopped
5 slices bonnet pepper
1/2 teaspoon black pepper
salt to taste
2 cloves garlic
1 med tomato
5 tablespoon cooking oil (i like coconut oil)

place the mackerel in cold water,bring to a boil,pour off and repeat.after draining second time set aside in cold water. blanch okra in boiling water,drain (not more than a 2 mins.
heat oil in a heavy saucepan add onion,garlic,tomato,pepper fry for about 3 mins. add okra, pickup mackerel,(nat in yu hand silly DWL) no some people love it wid de bone some dont, its up to you. add to the pot with the seasoning,cook for about 5 mins till okra soft.taste,add salt and black pepper if needed,enjoy wid some boil dumplin an boil banana.

now some people chop up the okra some like it whole, i chop it up after it blanch.

Thank you Grandma! Mine came out good- especially for canned mackerel, but I am very interested in trying your recipe with the tomtato, garlic and scotch bonnet pepper. Sound delicious. [img]/forums/images/graemlins/smile.gif[/img]
