Tamarind Balls
1/2 cup tamarind flesh
1 cup brown sugar (Demerara sugar recomended)If you can't get the JA. sugar then use granulated.
Granulated sugar for rolling
The tamarind flesh may be removed from the seeds either by scraping with a knife or rubbing the seeds and sugar against the side of the bowl with a wooden spoon. Mix tamarind flesh with sugar then roll into balls about 3/4 inch in diameter. The mixture may be worked around a tamarind seed. Rolls the balls in granulated sugar and store in an airtight jar. Makes 24 balls.

I've seen the green ones in the West Indian stores. I know a culture cooks them in stews. Yu noe of any such recipes?
