Mini Cheesecakes

24 cupcake liners
24 vanilla wafers
2 pkgs cream cheese, softened
3/4 cup sugar
2 eggs
1 tblsp lemon juice
1 tsp vanilla
1 can (20 0z) peach blueberry or sweet cherry filling
1/2 cup sliced nuts, optional

This recipe claims to make 24 cupcakes...but I find the batter really only makes 18-20.

Line cupcake pans with liners. Place a vanilla wafer in bottom of each liner. In small bowl beat cream cheese, sugar, eggs, lemon juice, and vanilla until light and fluffy.

Fill the liners 2/3 full with cheese mixture. Bake in preheated 375 oven for 15 to 20 minutes or until set. Top each with spoonful of filling and 1 tsp of nuts. Chill.

I did the Almond Rocco Cookies (grandma2) and the
Linzer Torte Bars (loops) and they came out great, and delicious.

I had to do a bit of 'tun mi han' mek fashin' for the Almond Rocco Cookies, I put in a bit of nutmeg, cinnamon, pecan. I didn't use white sugar, just dark brown cane sugar. Even though the recipe asked for 2/cups flour, I used 1/cup. But yu know we great cooks [img]/forums/images/graemlins/laugh.gif[/img] know how fi work it so it come out good and great tasting said way! ~lol~ The Almond Rocco Cookies are great with soy milk.

The Linzer Torte Bars. Wow! I gotta do that one again, it tasted soooooo good!
