Rose, I made the roasted brussels with our din tonight and they were sooooo good! Thanks so much for that recipe!

I'm thinking they would be good with a sprinkle of sesame seeds during the last few minutes of cooking...what do you think?

Steamed Spinach w/Kidney Beans and Mushroom

(NB: you can use fresh/canned/frozen spinach, canned beans, canned/fresh mushrooms. I used frozen spinach and canned mushrooms and beans, but of course fresh and uncanned is always better. Oh, I got this recipe from a Ghanian friend...it's really good.

1 Package frozen Spinach
4 oz can Mushroom
16 oz can Kidney Beans

Seasonings:
1/2 Onion, chopped
1 Tomato, chopped or diced
1/2 Sweet Peoper, chopped
2-3 cloves garlic

Powdered Seasonings (may vary according to preferences)

Onion Powder (a dash)
Garlic Powder " "
Seasoned Salt (amt by preference)
Black Pepper " "
1 Packet Sazon Seasoning (optional)

Method:
In a frying pan sautee onion, tomato, garlic, and weet pepper until well blended. Add spinach and powdered seaonings and cook until spinach is almost tender. Next add the kidney beans, mushrooms, and powedered seasonings and cook until spinach is tender (the color of the spinach should be green, not brown. If brown, then you have overcooked it [img]/forums/images/graemlins/wink.gif[/img] ). Serve with white or seasoned rice.

Veggie Seasoned Rice
1 cup Brown or White Rice
2 1/2 Cups Water
1 Tablespoon Dried Onion Flakes
1/2 teaspoon salt
1/2 teaspoon chicken-styled seasoning (a vegetarian seasoning. You could try substituting seasoned salt with a tuch of tumeric or cumin).

Heat rice in a frying pan or sauce pan until rice is brown or texturized. Next, add rice to a 9 by 13 baking dish (pre-sprayed). Add water and seasonings and mix well. Cover dish and bake in oven at 350 degrees for 55 mins-1 hr. Enjoy!!

Stupid question: When you say vegetables does that mean vegetarian also (like using veggie meat, etc.) or is it strictly vegetables? I know it's a stupide question, but I was just curious. Thanks.

Steamed Cabbage w/Carrots

1 Head of Cabbage
4-5 Carrots
1 scotch bonnit (sp)/hot pepper
1 Tablespoon oil (preferably Olive Oil)

Seasoning
1/2 Onion
1 tomato
1/2 sweet pepper
2-3 cloves garlic (or according to taste)

Powdered Seasonings
Black Pepper, a dash
Onion Powder, " "
Garlic Powder, " "
Seasoned Salt (to taste)
Sazon Seasoning (optional)

Cut and wash/clean cabbage and set aside. Wash and julienne or slice carrots (according to your preference) and put aside (in a separate container). In a frying skillet heat oil, then add onion, tomato, sweet pepper and garlic and sautee until golden. Add washed and chopped cabbage to sauteed ingredients, stir periodically and cover until cabbage is semi-tender. Add carrots, powdered seasonings, scotch bonnit (sp)/hot pepper, cover and let simmer until cabbage and carrots are tender. Serve with rice or yam/dumpling/banana, etc. and enjoy!

(NB: Cabbage tends to spring a lot of water when cooked, so avoid adding water while cooking)

Yes. They are good(and so easy), but they could use something..sesame seeds or even sunflower seeds? It could use some color too. Any ideas?

Vjay, I'm glad the spinach recipe went over well. I like it because it doesn't get too watery like spinach sometimes does. Your Okra Bread sounds delicious..the cornbread mix must add a nice flavor.

I forgot to mention that the mushrooms are really optional and should be finely chopped, unless you're a real mushroom lover [img]/forums/images/graemlins/smile.gif[/img] , then it doesn't matter. For the most part I usually forgo the mushroom and it tastes just as good [img]/forums/images/graemlins/wink.gif[/img] .

Stewed Veggie Beef

(You can substitute TVP Protein chunks for this recipe. I used a vegetarian beef patty - Morningstar Grillers - you can also use other veggie brands, but the previously mentioned one tasted much better to me.).

4 individually wrapped patties
3-4 Carrots, washed and chopped (size varies w/pref)
3-4 small irish potatos, washed and chopped (size varies)
1 tablespoon olive oil

Seasoning
1/2 Onion
1 tomato
1/2 Sweet Pepper
2-3 cloves garlic

Powdered Seasoning
1 tsp onion powder
1 tsp garlic powder
3/4 tablspoon seasoned salt
1/4 teaspoon black pepper
1 tsp chicken-style seasoning (optional)*
1 tsp beef-style seasoning (optional)*
1 packet Sazon seasonin (opt)
Ketchup
Hot Sauce
*(you may substitute regular chicken and/or beef seasoning if not vegetarian)

Method:
In a medium or large frying pan, sautee onion, sweet pepper, garlic, and tomato until tender. Next add carrots and potatos, with a dash of ketchup and cook until tender. Quarter each patty and add to pot, then add powdered ingredients, hot sauce, and about 1-2 tablespoon ketchup (according to preference. Avoid adding too much to cut down on salt intake). Cook for an additional 10 minutes, allowing seasonings to blend, and serve with your favorite rice (rice and pease, white rice, brown rice).

NB: these veggie patties are usually oily, thus avoid adding too much oil to the recipe by sticking to 1 tablespoon or less.

I got these recipes while doing some research, really veggie.
Broccoli, Mushroom, and Pepper Stir Fry with Caramelized Tofu

2½ Tbsp peanut oil (preferably roasted)
2 garlic cloves, minced
1 tsp finely chopped ginger
8 oz broccoli florets (about 2 c)
6 oz fresh shiitake (stems removed) or white mushrooms, thickly sliced

1 Tbsp each rice wine vinegar, brown sugar and soy sauce
½ c water or vegetable broth
1 red bell pepper, cut into long narrow strips
2 scallions (green onions), including an inch of greens, sliced (about ½ c)

1. Add oil to heated wok or large skillet. When hot, add garlic and ginger and stir-fry for 1 minute.

2. Add broccoli and mushrooms; stir-fry for 2 minutes.

3. Add remaining ingredients except tofu and scallions. Then cover and cook until the broccoli is tender, 4 to 5 minutes.

4. Add the Caramelized Golden Tofu (see recipe below); cook until hot, about 2 minutes more. Serve garnished with the scallions.

Makes 4 servings

Per Serving: 140 cal, 3 g pro, 16 g carb, 9 g fat, 1.5 g sat. fat, 0 mg chol, 3 g fiber, 270 mg sodium

Prep Time: 15 minutes

Cooking Time: 10 minutes


Caramelized Golden Tofu
1 lb firm tofu, cut into slabs about ¾-inch thick
2 Tbsp peanut oil, divided
Salt to taste

2 tsp soy sauce
3½ Tbsp light brown sugar

1. Drain tofu, blot with paper towels; cut into ¾-inch cubes.

2. Heat oil in medium-sized nonstick skillet over medium high heat. Add tofu and fry until golden, about 3 minutes; lightly sprinkle with salt to taste. Drain on paper towels.

3. Mix soy sauce and sugar in a small bowl.

4. Heat wok or heavy skillet; add tablespoon of oil used to fry tofu or fresh peanut oil, and swirl it around the wok. When hot, add soy mixture, reduce heat to medium, add tofu. Toss well, then simmer for 2 minutes.

5. Add 3 tablespoons water; cook until sauce coats tofu with syrupy glaze. Turn off heat. Let tofu cool in syrup for 10 minutes.

6. Stir into broccoli, mushroom and pepper mixture.

Makes 4 servings

Prep Time: 8 minutes

Cooking Time: 15 minutes

Here's one of my favorite soups:


Don’s Spicy Sweet Potato Soup
2-3 servings

2 medium size sweet potatoes
16 ounces Chix or Vegetable stock
Salt TT
1 ½ Teaspoon cayenne pepper
1/3 cup heavy cream

Preparation:
1. Peel and dice potatoes.
2. Place in 2 quart pot with stock and cook until potatoes are fork tender.
3. Remove potatoes and place in blender with a little of the liquid. Bend until smooth.
4. Return the pureed potatoes to sauce pan.
5. Add cream, cayenne and salt.
6. Heat for 3 minutes more.

Serve with pepper crackers or hard dough bread

Here's one for cabbage taken from a recipe site. I was worried it would taste boring, but it was quite good.

CABBAGE CASSEROLE

1 head cabbage, shredded
1 can cream of mushroom soup, undiluted
1 onion, chopped
5 tablespoons butter or margarine, divided
6 ounces cheese, cubed or shredded(calls for American..I used a shredded mixture)
1/4 cup dry breadcrumbs
salt(optional)
pepper to taste

cook cabbage in salted water until tender; drain

saute onion in 4 tablespoons butter in a large skillet

Add soup and cheese, heat and stir until melted

stir in cabbage, salt, and pepper

transfer to an un-greased 2 qt. baking dish

in a small skillet, melt remaining butter; stir in breadcrumbs and brown lightly(I used cracker crumbs)

remove from heat and sprinkle over casserole

bake at 350' for 20-30 minutes or until heated through

Red , green, and gold :]
you will need yellow squash , green zucchini red tomato ,onion ,muchrooms , green pepper , basil , Garlic ,salt and pepper , dry wine , butter and cheese for garnish.

Slice squash , zucchini and tomato set them aside. in a pan lightly brown 1 onion sliced , 1/4 green pepper sliced , 8 oz muchrooms sliced and 2 garlic cloves diced in butter.
In a baking dish place mixture in the bottom.
1 tea. of basil over top 1/4 cup of wine pour in.
On top place tomatoes , zucchini , squash on top
a tomato a zucchini and a squash and just keep going till your done. bake for about 45 mins. pull out and garnish with cheese while hot.
