yu knoh IM a not too sure if its Mexican or Italian, if not the have the same one, its lots of eggs,made with cheese or spinach or just about any vegetable you like in it.

good if you have a cast iron frying pan also

Three-Cheese Fritatta

2 eggs
cheddar cheese
jalepeno jack cheese
mozzarella cheese
1 Tablespoon diced red pepper (just to make it pretty)

Beat 2 eggs and pour into a pan heated on medium setting. Sprinkle with the cheeses and cover. This will cook fairly fast so you'll want to keep checking on it.

When it's done slide it out of the pan onto a plate and put the red peppers on.

that a small easy one

look at this one i just found on the net sounds nice thik i will try it. we eat it alot for supper or lunch

Cowboy Fritatta

1 pound ground sausage
1/2 cup chopped peeled onion
6 eggs
1 package (8-oz.) cream cheese room temperature
1/4 cup whipping cream
2 cups (1/2-inch pieces) French bread
2 cups shredded Swiss cheese
2 zucchini cut into 1/4-inch slices
1/4 cup chopped seeded green bell pepper
1/4 cup chopped celery
1/4 cup sliced black olives
2 teaspoons salt
2 teaspoons ground black pepper
1/2 teaspoon crushed garlic

1. Preheat oven to 300°F.

2. In a large skillet crumble sausage and cook with onion until sausage is browned; drain thoroughly.

3. In a medium bowl beat together eggs, cream cheese and cream until smooth. Stir in bread pieces, Swiss cheese, zucchini, green bell pepper, celery, black olives, salt, pepper and garlic.

4. Transfer to sausage mixture and toss until mixed together. Pour into greased 10-inch springform pan, or 9-inch square cake pan.
5. Bake for 30 to 45 minutes or until center is firm.

see now i would pour it into my cast iron frying pan,and cook in butter on the stove top for about 15 mins (med-low heat) then put it in the oven till dun

Stuffed French Toast
INGREDIENTS:
• 1 1/2 tsp vanilla
• 1/4 cup sugar
• 1/2 cup milk
• 1/2 pkg bacon
• 1/2 lb breakfast sausage
• 1/2 lb boiled ham (thinly sliced)
• 1 tsp cinnamon
• 1 pkg american cheese
• 1 loaf large diameter french bread
• 4 large eggs
STEP BY STEP:
1. In a large skillet fry the bacon and breakfast sausage, together but separately, until done.
2. While the meat is cooking, slice the french bread into eight slices approximately 1 1/2" to 2" thick; then slice each slice 3/4 of the way through again.
3. Mix the milk, eggs, sugar cinnamon and vanilla togeather into a batter in a deep bowl; set aside.
4. Take up the bacon, sausage and ham and divide each into eight equal parts
5. Dip each piece of bread into the batter and submerge it so that both sides and edges are coated.
6. Open each piece and put in one portion of the meat, bacon, and ham along with one slice of cheese and close the bread again.
7. Fry the stuffed batter-coated bread slices in a lightly oiled skillet until golden brown on the outside and the cheese is melted on the inside.
8. Serve two slices to a plate with your favorite garnishes and condiments.

Spinach and Chorizo Scramble Eggs

2 Tbsp olive oil
¾ lb Chorizo thinly sliced
4 green onions chopped
2 bunch fresh spinach chopped
6 eggs
1-cup cheese (you can use Cheddar or any Mexican cheese that melt good Asodero and Queso fresco or two that can be use)

Heat oil add chorizo and cook for 5 mins. Add onions and spinach cook for 3 min; pour off any liquid that is in the pan. Beat eggs with 2tbsp water and add to mixture.
Serve with Toast or Tortillas.


Mexican Scramble eggs

1 Tomato chopped
1 tsp oregano
4 eggs beat with some water
½ cup cheddar cheese
2 tbsp olive oil
1 onion
1 Jalapeno pepper chopped
1 clove garlic
Salt to taste
Heat oil add onion and garlic cook for 5 min add tomato, pepper and oregano.
Add eggs.



Ham & Cheese Quesadillas


1 cup Queso Asodero
4 ounces Ham finely chopped
¼ cup green chilies
8 flour tortillas

Divide cheese equally on 4 tortillas add chili and ham place remaining tortillas on top.
Heat a skillet or flat top and cook for about 2min on one side then on he other until the cheese is melted.


Papaya & Kiwi Salad with orange dressing


1 Papaya
4 Kiwis
¼ cup orange juice
3 Tbsp Honey
1-cup sour cream or plain yogurt
1 tbsp orange zest
1 tbsp lime zest

Peel and slice fruit arrange on plates.
Combine juice, honey, zest and sour cream. Spoon over fruits

Thanks everyone ~ my online recipe file is bulging now and I'm hungry [img]/forums/images/graemlins/laugh.gif[/img] There's a lot there and I'm going to try some of them to see what's fast and easy. I can set a pretty table and there's a lady nearby who has a stand in front of her house where she squeezes fresh juice every morning....whatever you fancy and what's in season. I just take a pitcher up there and she will fill it. YUMMMMMMMY
