Rundown and other One Pot Recipes

Greetings

i am looking for good, simple, tasty, filling, economical one pot recipes where i can put all of my ingredients in the same pot and use only THAT pot

i am also in need of ways to "improvise" certain spice/ingredient staples that - although common to Jamaica and Miami et al - are not easy to come by here in Houston

Seasoned Rice (the Jamaican way)

Ingredients
2 cups uncooked white rice
1/2 lb diced pumpkin
2 tsp. vegetable oil
1 tbsp. onion, chopped up
1 cooking tomato, diced
1/2 lb desalted cod fish (optional)

Combine every thing in pot, cook on high heat until rice is cooked.

Other Seasoned Rice

1 medium onion
2 teaspoon vegetable oil
2 cup of rice
1/3 teaspoon garlic powder
2/3 teaspoon ginger
Salt to taste
3 cup of water
2 whole cloves
2 cardamoms
1 cinnamon stick (1 or 2 inches long)

Preparation
------------
Slice onion and cook until golden brown in oil or margarine. Add rice, garlic powder, ginger and salt. Cook until light brown in oil with continuous stirring. When rice mixture forms lumps, add water. Lower heat and add cloves, cardamoms and cinnamon sticks. Cover and cook until tender.

This is a fish, veggies and banana casserole. It's easy to prepare and tasty.


4 1/2 lbs. fish fillet
1/2 can whole kernel corn
1 1/2 dozen green bananas
1 large sweet (green) pepper
1 carrot
1 medium onion
1 tbsp. white pepper
1 tbsp. all-purpose sauce
1 tbsp. soy sauce
1 tbsp. corn starch
2 tbsps. garlic powder
1/4 tsp. salt
1/2 cup water

Prep
----
1. Drain whole kernel corn. Boil and crush bananas. Cut sweet pepper and carrots into strips. Chop onions.

2. Cut fillet into strips. Season with all-purpose sauce, soy sauce, garlic powder, white pepper and salt.

3. Allow to marinate for 15 to 20 minutes. Heat oil in frying pan. Add fish strips and fry, turning occasionally until cooked.

4. Add 1/2 cup water, sweet pepper and corn. Allow to simmer. Dissolve cornstarch in a very small amount of water and add.

5. Correct seasoning. Turn out into a casserole. Cover with green bananas.

6. Bake for 10 to 15 minutes, or until slightly browned.
