Cooking again, but need some ideas....

I got hired last mth to cook for the summer out at the Golf Club, nice new place [img]/forums/images/graemlins/smile.gif[/img]
And I start this Thurs, they will be open full time on Easter Wk end.

They are talking about having a daily lunch special, anyone have ideas... ???
So, far I have come up with :

Chicken pot pie
tuna casserole
meat loaf
chili/bun
hamburger/salsa/cheese pie

now my mind has gone blank.... any suggestions are appreciated!!

No, I am not Jamaican. But am married to one. So I have learned to cook Jam style.

The golf course menu will be american/canadian style cooking. Except for the fish and shrimp! [img]/forums/images/graemlins/smile.gif[/img]

Try adding chicken wings...honey or jerk

You got to have Macaroni/cheese, french fries

Desert: cookies, coconut cake, key lime pie, ice cream cones, etc...something like that

Salads made up, fruit cup, yogurt/granola combo

Will add more lata!

Do you have a reciepy for chicken pot pie. Its the top layer, I need help with (dough/bread...)

Good Luck with your new position Redj.

I get out and golf a lot.. here are a few ideas.

For lunches you might have a few considerations.

- Golfers may be between nines and only have a few minutes to eat.
- Guests maybe arriving just prior to their tee time and also have little time to eat.

Have a few quick alternatives for them.

Sandwiches should be on thick slices of bread...
Tuna,Turkey,Ham,Roast beef,egg salad along with the option of adding soup or salad or fries.
Make sure to use green leaf lettuce and good cheeses. If you are pre making some of the sandwiches wrap in wax paper to avoid the lettuce wilting or bread going soggy.

Quesedillas (sp) served with sour cream and salsa are good.

Clubhouse sandwiches are popular as well.(use only carved meat for these.)

Hot turkey,chicken,beef plates are quick and easy plus the meat can be used for sandwiches.

Have a vegetable of the day to add to any meal.

Soups should be hearty with lots of chunky meat and vegies in the stock.

Plus the usual chicken wings,sausage on a bun,burgs,dogs and the like.

Quesedillas... good idea...wraps are popular now.

I have to meet with the manager on Thurs to brain storm, and want to have some new ideas (low fat, heart wise...kind of things etc). The manager, did mention that shrimp would be on the menu, and not the batter kind. I told her, she was in luck, I do shrimp in the pan many different ways.
I sorta getting excited now that the new ideas are starting to flow........
I am a golfer too, so I know what they like.
The driving range will be open next wk, and then the whole course on Easter wk end.

I haven't checked the other suggestions so if I've duplicated something, please forgive.

Here goes:

Grilled/Roasted Peppers with roast beef, bacon and swiss cheese sandwiches

Grilled chicken and asparagus pizza

Jerked chicken breast top over wild rice or rice & peas

Chicken ceaser burger

Veggie burger

Vegetable stir fry

Chicken stir fry

Grilled tuna sandwich or salad


It's my month end so I'm a tad busy...I will add more later.

Yes, instructions would be great. I can handle the ordinary things- Soups/sandwitches/common type casseroles. Things i need help with are like ...ie quesedillas, wraps (what would you fill them with?
I'm not a new cook, I have been a serious cook at home for over 30yrs, but the restaurant style is sorta new to me. And the quantities !!!
