Chicken Pot Pie
1 chicken, cooked in water with celery and onion and boned (reserve broth)
1 (8 oz) pkg. frozen peas and carrots, parboiled 3 minutes
3 potatoes, peeled, cubed and cooked
2 hard-boiled eggs, sliced (optional)
Dumplings made from pastry or dumpling dough, cooked in chicken broth (optional)
Sauce:
1/2 stick margarine
1/3 cup flour
1 pint chicken broth
1 can Cream of Chicken Soup
1 cup milk
elt margarine and stir in flour. Whisk in chicken broth. Cook until thickened. Stir in soup and then milk.
Topping:
1 cup self-rising flour
1 stick margarine, melted
1 cup milk

Place chicken, vegetables, eggs, and dumplings in lg. baking dish, making two layers. Pour sauce on top, stir in if necessary.

Mix together topping ingredients and spoon or pour on top. Bake at 375 for 30-45 min. until topping is golden brown.

Quesadillas

14 prepared tortillas. uncooked
1 cup Cheddar cheese, grated
1 Jalapeno peppers, seeded & sliced in strips
salt
Combine cheese and pepper strips. Season with salt, and set aside.

Heat oil in skillet. Place a spoonful of the cheese mixture in the center of the tortilla, away from the edges.

Fold the tortilla over the filling to make a half round. Press the edges firmly together. Place in if the hot oil and cook on both sides until brown & crisp.

Lift the quesadilla out of the skillet and allow to drain on a paper towel. Transfer to a warm oven while the other quesadillas are cooking. Serve hot.

Tuna Casserole

4 ounces Noodles, broad, uncooked
3 cups Water; salted, boiling
1 can Cream of mushroom soup
1/3 cup Milk
7 ounces Tuna, drained and flaked
1 cup Peas, cooked
Buttered bread crumbs
Cook noodles in boiling salted water about 2 minutes. Cover and remove from heat, and let stand about 10 minutes.
Meanwhile, combine mushroom soup, milk, tuna, and peas. Rinse noodles with warm water and drain well. Fold noodles into tuna mixture; pour into a greased 1 quart casserole. Sprinkle with breadcrumbs and bake at 350 degrees about 30 minutes. Serves 4.

Shepherd's Pie Recipe

2 cups cooked chopped meat
1 tablespoon finely chopped onion
2 cups gravy
salt and pepper
2 cups mashed potato, prepared with milk and seasonings as desired
salt and pepper
1/8 teaspoon paprika
1 tablespoon butter

Combine meat, gravy, and chopped onion; season with salt and pepper to taste. Line the bottom of a buttered baking dish with a layer of half of the seasoned mashed potatoes. Add meat mixture then cover with remaining mashed potatoes. Or, meat and gravy can be put in the baking dish first then topped with all of the mashed potatoes. Dot mashed potato topping with butter, sprinkle with salt, pepper, and paprika, then bake for about 30 minutes at 400°, or until potato topping is browned and the Shepherd's pie is thoroughly heated.

This shepherd's pie recipe serves 4.

Chicken wrap recipe

4 boneless skinless chicken breasts
8 slices dried chipped beef
1 can cream of mushroom soup
1 c sour cream
1/2 c cream of sherry or cooking sherry
Dash pepper

Wash chicken. Mix soup, sour cream and sherry in saucepan. Heat. Take chicken and wrap each breast in beef. Place in greased dish and pour heated sauce over chicken. Cook slowly 4 hours at 200 degrees. Check after 3 1/2 hours.

Another Chicken wrap recipe

4 boneless, skinless chicken breasts
1 teaspoon dried Mexican seasoning
6 (12-inch) flour tortillas
2 cups (8 ounces) shredded Monterey Jack cheese with peppers
1 purple onion, chopped
3 plum tomatoes, chopped
3/4 cup ranch-style dressing

Cut each chicken breast into 6 strips, and toss with Mexican seasoning.
Sauté chicken in a nonstick skillet coated with cooking spray over medium-high heat 6 minutes or until done. Remove from skillet. Wipe skillet clean.
Place tortillas, 1 at a time, in skillet, and sprinkle with 1/3 cup cheese; cook over medium-high heat 2 minutes or until cheese melts. Remove from skillet, and layer each with one-sixth of chicken, onion, tomato, and dressing. Roll up, jellyroll fashion, and repeat procedure with remaining ingredients. Serve with salsa.
Makes 6 servings.
