I went to a beach party (damn that sound like a song) and they served Macaroni Pudding, and Jamaica roast Chicken. I know regular roast chicken. Any one has any ideas on doing this also how to amke a good Macoroni Pudding that the top dont turn hard.

i know for a fact this is not Jamaican Sailor but here is a recipe
Macaroni Or Spaghetti Pudding
1 oz macaroni or spaghetti
1 oz butter
1 oz sugar
1 pt milk
2 eggs
1/2 lemon rind, grated (or other flavour ring)
1 teaspoon salt
Break the macaroni or spaghetti into 1/2-inch lengths, put them with a pinch of salt into the milk when boiling, and simmer until tender.
Add the sugar, butter, lemon-rind, and the well-beaten yolks of the eggs, stir the mixture by the side of the fire for a few minutes, but
do not let it boil. Lastly, add the stiffly-whisked whites of eggs, then turn the mixture into a greased pie-dish, and bake slowly from
25 to 30 minutes.
Time: About 1-1/2 hours. Sufficient for 3 to 4 persons.

Thanks Ever so much , As a kid in Jam I did not evenknow what macaroni was much less, but now experimenting with different culture food is quite a lot of fun. Here (in Cayman) they do "run down" with fresh fish. tast quite good. its called Coconut dinner. and they make "cake" from anything that dont walk. yam cake bredfruit cake papau cake . you name it but i must admit it is quite tastie.
