Cocobread -An Authentic Recipe

Having tried several recipes posted and given to us by friends and having no luck at all coming up with anything close to the cocobread we've had in Jamaica, my wife Trisha, learned the art of baking good and greasy cocobread from baker George Graham,in the kitchen at at Barry's Bold As Love on the beach in Negril.
The three of we collaborated in producing a recipe along with a lengthy explanation of how and why as well as pictures which I have attached to page two (the index) of my website. We wish to make it available to all interested and invite e-mail comments and suggestions from the very knowledgeable people in this forum.

Hi Grandma 2,
Please let me know how the recipe works out for you. We have kitchen tested it to be sure it works but would be interested in your highly qualified opinion of the finished product. Of course that means that I'll now have to start reading this forum as well as the International political forum where I spend most of my time.
There isn't time enough in the day to read all I want at jamaicans.com never mind the rest of the worldwide web.

I'm not sure what you meant by " brushing on soft margarine". Did you mean on the past failed recipes? .
If so, I don't think it would have made much difference as in the good recipe, the dough itself contains a lot of margarine, much more yeast and a different form of flour than found in those failed recipes not to mention the inundation of melted margarine that is spooned between the layers and onto the top of the finished product.
No, cocobread is a most unusual and delicious kind of bread made in a most odd way and which goes right to one's hips and batty .
The Atkins and South Beach Diet people must flip out when they encounter cocobread.
All the wrong carbohydrates and lots of calories from fat. A dieters nightmare. A no-no too good to pass up.

i was refering to the melted margarine, how about just soft instead of melted....anyway will try it an let you knoh

yes an the flour,i use that for mi Ja bread. here in Canada we have a store call Bulk Barn were we can get glutten flour

Hodgson Mills is one producer of wheat gluten and you can call them toll-free at 888-525-0177 x31 and ask where it is available in your area. (This info is mentioned in the recipe introduction)
Another producer is Arrow Mills but I have no info on them..
