Hi Everyone! I've been scarce on this forum lately as I haven't been cooking much [img]/forums/images/graemlins/blush.gif[/img] . Here's a delicious and easy swiss chard recipe that satisfied my callaloo craving quite nicely.
1 lg bunch swiss chard
chopped garlic
chopped green onion
3 tblsp olive oil or butter
1 or 2 tablespoons lemon juice
scotch bonnet peppers to taste
salt
black pepper
celery salt
pinch of nutmeg
1 chopped tomato
Wash swiss chard thoroughly and drain. Remove leaves from stalks and tear into small pieces. Set aside.
Cut stalks into 1/2 inch pieces. In large saucepan saute stalks, onion, and garlic in butter or olive oil. Add salt, pepper, celery salt, nutmeg and lemon juice to pan. Reduce heat. Add swiss chard leaves. Cover. Simmer 15 min. stirring occasionally. Add chopped tomatoes just before serving.
I've used 1 small piece of scotch bonnet and it makes it just spicey enough. Also, substituting a little Italian dressing for the lemon juice works well too.
