Coconut Drops

Kind people,

I am setting up a display table (about Jamaica of course)at a Multicultural Festival this Saturday. I need ideas for appetizers, snacks or sweets that do not require refrigeration or heat once they are made so we can hand out a little sample taste of Jamaica to the people.

Coconut drops come to mind, or perhaps a spice cake that I can cut into small squares? Anybody have any suggestions?

I will attempt to make them myself. I think something sweet would be nice.

G2, is your recipe for coconut drops posted somewhere already?

OK, now I'm craving bun and cheese and pitata puddin!

Coconut Drops

1 coconut diced about 2 cups
1 little piece of ginger grated
3 cups sugar brown or white

in a heavy pot (like dutch pot) place coconut and enough water to cover,simmer for about 30 mins. add more water if needed,add sugar,boil for about 15mins. it will get thicken,if you test it in water it will form a ball. butter or damp a cookie sheet and drop by spoonfuls let it cool.
