I am only to page 7 of Soul Hunter’s FABULOUS report and there was mention that he had eaten coconut bread, which made me think that a recipe for COCONUT BREAD would be the best thing to have this weekend.

when you get to the website look for the second page or so which is the index and go to the Jamaican recipes section.
If it is coconut bread and not cocobread then by all means check with Grandma 2.

Coconut Bread
2 cups flour
2 teaspoon baking poeder
1/2 teaspoon salt
1 teaspoon nutmeg
1/2 teaspoon cinnimon
1/2 cup sugar
1/4 cup raisins
***1 cup diced coconut***
1 cup water
1 teaspoon vanilla
1 egg
1/4 cup margarine, melted
mix flour, baking powder,salt nutmeg and cinnimon together. ***blend coconut and water in a blender*** add the egg and vanilla,blend again.
stir the blended mixture with melted margarine into the dry ingredients.
bake in a loaf pan 350degrees for about an hour. can be served hot
as to the coconut, if you cannot find the real coconut, then yes you can use the dry one from the store....not as good but you would get the idea.
so you would have to skip the blender part, add milk instead of water with the egg and vanilla. enjoy
Grandma2 - when you blend the coconut, you first (of course) remove the hard shell, but what about the brown "skin" (don't know the right word for it)? Does that stay on the coconut pieces for the blender??
