Octopus Salad

1 octopus (4 to 5 pounds)
4 stalks celery, medium diced
4 lemons, juiced
1 can large pitted olives, halved
1 clove garlic, minced
3/4 red onion, medium diced
1 tablespoon parsley, chopped
Olive oil
Salt and pepper, to taste

In large stock pot boil octopus until tender (1 hour 45 minutes to 2 hours). Take out and let cool. When cool, clean and slice. In a large mixing bowl, add celery, juice from the lemons, olives, garlic, onion, parsley, and sprinkle with olive oil. Mix well and season salad with salt and pepper. Remove from mixing bowl and serve at room temperature

Octopus Salad (Ensalada de Pulpo)

INGREDIENTS:
3-1/2 pounds fresh or precooked octopus
4 bay leaves
1/2 tablespoon black peppercorns
2 sprigs cilantro
1 teaspoon salt
1/4 cup raspberry vinegar
3/4 cup olive oil
1/2 cup manzanilla olives 1/2 medium red onion, finely chopped
black pepper to taste

If using fresh octopus, in a large pot combine the octopus, bay leaves, peppercorns, cilantro, and water to cover, and bring to a boil. Reduce the heat and simmer for 1 hour. Drain and cool. Clean the octopus by cutting out the eyes and cut it into small pieces.

Whisk the remaining ingredients in a bowl. Add to the cooked octopus and refrigerate for at least 1 hour before serving, although it's better if left overnight.

Eke Takare I Roto Ite Akari
(Curried Octopus in Coconut Sauce)

A seafood recipe from that South Pacific paradise, the Cook Islands. Cooking times are guesses.

1 whole fresh octopus
coconut cream
salt, to taste
pepper, to taste
1 small onion, chopped
curry powder

2-4 servings 1 hour 30 mins prep

This one is from a page with some interesting info on Octopus (at least I think so, but I am a biology/food/trivia geek)....

Octopus Tidbits

2 cups octopus

2 eggs

2 teaspoons dill weed

2 tablespoons finely chopped onions

1/2 cup breadcrumbs

1/4 cup butter or margarine, melted


10 servings

45 minutes 30 mins prep


Boil fresh octopus for at least 10 minutes.

Remove skin.

The skin and suckers will"slip" off the tentacles when it is cooked.

Prepare cooked octopus for tidbits by grinding as you would hamburger.

Once is sufficient.

No further tenderizing is necessary.

Mix ingredients together.

Form into balls no larger than 1" in diameter.

Roll in bread crumbs to coat.

Pan fry in butter or margarine until golden brown.

Garnish with lemon, lime, tomatoes or lettuce

Curry octupus is good too...mi only eat ei, mi nuh know how fi cook ei. But mi know yuh haffi beat ei fi tenderize ei. But I would think a de same way yuh cook conch? No?

Leonie, if you care about my non-Jamaican opinion, it is similiar to conch, but I do not think that Octopus (prepared correctly) is quite as rubbery. I would think it would be nealry interchangeable in recipes.

Just saw this, sorry for the delayed reponse. I liked it,I guess as long as it is prepared properly. My SO's brother made it and it was very good.
