Stuffed Green Peppers with seafood.

4 Green Peppers
1/2 lb Baby Shrimps
1/2 lb Lobster Meat
1/2 Spanish Onion (mediun size0
1 stalk Scallion
Thyme, Salt, Pepper, Garlic
1/2 lb Rice
12 oz Marble Cheddar (grated)
2 oz olive oil or Butter
Method
Cook rice 90% done (will finish cooking in oven)
Wash, dry, cut peppers in half and core them.
Saute Scallion, Onion,Thyme, Garlic in olive oil
cut up lobster into small pieces and add to shrimps, cook for no longer than 2 minutes if they are already cooked make sure they are thawed and drain the excess water. add to the saute herbs and spices and add to the cooked rice, portion rice mixture into pepper halves put in oven at 350 for 30 minutes add the cheese to the stuffed peppers keep in oven until it melts,
Peppers should be firm, not soggy.
enjoy your stuffed peppers with a crisp field grees salad with mango and pine nuts with raspberry vinegarette dressing.
