No is not Weight Watchers recipe it is my own, but it counts as 0 points by Wt. Watchers standards and very delicious by my own standards.
So for those who are looking for a pick me up that is delicious and filling in between meals here goes.
Green Soup
4 cups of green cabbage shredded and washed.
2 cups of okras washed and chopped
1 stalk or head of leeks pulled apart washed and chopped.
five cherry tomatoes chopped
1 whole jamaican green pepper NOT chopped but whole
a small onion chopped
three cloves of garlic chopped
2 packs of knorrs chiken bullion powder.
1 quart of water
A pressure cooker.
Combine first three ingredients in the pressure cooker and add 1 quart of water. Pressure cook for twenty minutes. Remove vegetables from the cooker following manufacturers instructions for opening the pot. Please be careful!
Pour vegetables 2 cups at a time into the blender and blend till smooth. Place blended mixture into a separate sauce pot.
Now saute the chopped onion, garlic and tomatoes in skillet sprayed with pam till slightly brown, add to the sauce pot with pureed vegetables. Place on the stove on med. heat and let simmer. While soup is simmering add bullion powder and stir, check the taste. You may add salt to taste.
Once a desirable taste is achieved, add whole jamaican pepper to the mix and cover pot. Turn the stove to med-low and let simmer for approx. 20 minutes.
You may want to dish soup into individual containers and freeze for the days ahead.
Delicious full bodied and O points so you can eat as much as you like.
