Cooking rice and peas in the oven

Yesterday I was at my cousin's house and she told me she cooked her rice and peas in the oven. (it was nice and shelly) [img]/forums/images/graemlins/laugh.gif[/img] .

She was about to give me details, but then she was called to hostess duty. And I forgot to ask about it later.

Anybody here cook rice and peas like that? How is it done? How long it tek? Do you have to stir the pot? I assume the peas are cooked stove top.

I have cooked rice in the oven before, but never rice and peas..
but I would guess thats its the same thing..
I usually cook it if I am baking chicken..so everything will be cooked at the same time.

yu knoh Pepper its funny yu should ask about this....mi have a friend, every day mi cuss har say she caan cook, caw she cook every dam ting inna har oven /.

anyway a she did give mi dis recipe caw mi collect recipes, now mi never cook it yet,but mi eat hers an it taste nice

Baked Rice and Peas

1 pound dried pigeon peas, picked through and rinsed
2 sprig thyme
1 medium onion, chopped
5 pimento seed crushed
2 cloves garlic, minced
1 cup coconut milk or cream
2 slice scotch bonnett pepper
1/2 teaspoon black pepper
1 teaspoon salt
3 tablespoon margarine
21/2 cups brown rice

Using a large pot over medium heat, combine pigeon peas, garlic, pimento, thyme, coconut and 3 quarts of cold water. Cover and cook the peas until tender, about 1-1/2 hours, adding more water as needed to keep peas covered.boil until 4 cups of water remains,(you can drain and measure this) Heat oven to 350°F. Using a Dutch oven or ovenproof pot over medium heat, heat the margarine. Saute the onion and pepper, until softened, about 5 minutes. Add rice, peas with liquid, season with salt and pepper. Cover and bake until rice is tender and liquid is absorbed, about 25 minutes.

grandma2...DWL...mi caan badda stand inna kitchen stiring, watching no pot, adding and tasting...everyting go inna oven and mi come back 1 hour or more and ie done....my kinda cooking.

I've also cooked smoked oxtail in the oven once and it came out yum, yum.

i'm definetly going to try this receipe...

I think this Sunday dinner will be Oxtail with rice and peas. Both cooked in the oven.

My auntie awlays cook fi har rice and peas in de oven and it comes out nice and shelly...she does catering up in Canada.
