Question about Rice & Peas recipe in Archives

It calls for 1/2 to 1 cup beans/peas.

Is that the measurement before or after soaking? 1 cup peas soaked overnight doubles in size [img]/forums/images/graemlins/laugh.gif[/img] I don't want to use too much...OR too little...

but you can use half cup if you dont want too much in it

Thanks SS... I am trying the recipe here - its the only Jamaican dish I've NOT been able to do. Wish me luck...

My rice dishes usually turn out gloppy...

try using less liquid Danielth and after you add the rice to the cooked peas turn it down low as soon as it comes to a full boil and let it stays there anc steam
make sure the pot is covered properly

I am sure others will come in and tell you how they do it

soaking the peas *before* cooking sweets, mek the peas cook faster...
dats why a lot of people do it the nite before, so that dem wont have to come back and cook peas, after church, ...
by soaking, the peas will be ready, before u leave, ...
in fact the whole rice and peas can be cooked before u leave, if u soak u peas and grata the coconut the nite before..

Gungo Peas & Rice

4 cups water
1/2 pk coconut cream
2 cloves garlic crushed
1 can gungo peas
1/4 cup margarine
1 stalk escallion
1 sprig thyme
1 scotch bonnet pepper
1 1/2 teaspoon salt
1/2 teaspoon black pepper
4 pimento seed crushed
2 1/2 cup parboiled rice

bring water to a boil in a medium size pot and mix in coconut. add crushed garlic to the boiling liquid along with the drained peas. add margarine,escallion,thyme,whole pepper,salt,black pepper and pimento seed.

wash rice add to the mixture and stir.

reduce flame to low,and steam for about 1/2 hour or until done. enjoy

Are you not afraid of the PEPPER? It will burn hott if the seeds disperse in the rice.

oh DanielTh sorry bout dat,yes if it taste good sometimes it can be over looked

mek a ask yu something,a bet is white rice yu useing an not parboil brown rice,caw dat one hard fi get gloppy as yu say [img]/forums/images/graemlins/smile.gif[/img]

You are right G2, it is regular ol' cheapo white rice...
