TAMALE PIE
1 LB Ground Beef
1 small onion chopped
1 16oz jar salsa
1/3 cup water
I package taco seasoning
1 Cup Frozen Corn Kernels
1 2.25 oz can sliced olives
Crust
1 cup cornmeal
1 12 oz can evaporated milk
1 40z can diced green chilies
1 cup shredded cheddar cheese
1 tsp salt
Jalapeno slices optional
Preheat over to 425. Combine cornmeal, milk, chiles, 1/2 cup cheese, and salt in saucepan. Cook over medium/high heat for 5-7 minutes or until thickened.

Garlic Chicken
Chicken parts (your prefrence)
Large can of Cream of Mushroom Soup
Stick of Butter or Margarine
3 sticks of Celery
1 small green pepper
scallion
medium onion
2 cloves of garlic or granulated garlic
seasoning salt and pepper to taste
Sharp cheddar cheese 1 to 2 cups, more if you like
Package of Egg Noodles
Sauteed Fresh Brocolli or Mixed Vegatables or Frozen Stir Fry Veggies
In Large pot fill half full with water add chicken and other ingridients EXCEPT noodles, and C of Mushroom soup and Cheese bring to boil and then simmer until chicken is done.
When done remove Chicken from broth and add noodles, cook until done. Add Ceese and Cream of mushroom Soup and stir until Chese has blended.
Now you can either pull chicken apart or leave peices whole. Pour Cheese and noodle mixture in to a Cassarole dish add chicken and vegatables cover and bake for 30 minutes in a 375 D preheated oven or until cheese is bubbling or browned.
Serve with French Bread or Hawwaian Rolls and a mixed salad and enjoy.
Not too good at giving measurements I just do it to taste but try it this way the first time and see if it works for you.

Rice and Spinach Casserole

2 cups cooked rice
1 cup spinach, partially cooked (stems removed, leaves minced/peeled up in tiny bits)
1 tablespoon margarine
One scallion stalk, cut up
3 tablespoon grated parmesan cheese
1 teaspoon black pepper
1 teaspoon dill
Heat oven to 325 deg/F. Scoop rice into a oven suitable bowl. Mix in butter, chopped celery, spinach, dill and black pepper. Layer parmesan cheese on top. Bake for 25 mins, or until parmesan is a golden colour.
