I just tried some Presidents Choice Coconut Cream ice cream and I'm still fighting the urge to go buy some more.

I live about a two minute walk away from a local dairy. They have wonderful ice cream but I try to limit myself to about one cone a month due to diet concerns.

Well, I have a recipe for coconut icecream in my caribbean cook book...if you're interested I will email you the details.

Judging by the name of those flavors, they sound wikedly delicious.
Maybe someone will set me straight; but i cant remember seeing any Carvel's in the "Charm City" area, neither Ben and Jerrys.
Annika, go ahead and mail me the recipe; and give me the name of that Caribbean Cook Book,and where I can find it.
Are there a lot of icecream recipes in the archives?

Grapenut-Raisin Ice Cream

To make a delicious French vanilla ice cream, simply eliminate the Grapenuts, the raisins, and the extra 3/4 cup milk, or add 1/4 cup rum with the raisins


3/4 cup plus 1 cup whole milk
1/2 cup raisins
2 cups light cream
5 eggs Yolks
1 cup sugar
1/8 teaspoon salt
1 tablespoon vanilla extract
1/2 cup Grapenuts

In a small bowl, pour 3/4 cup milk over raisins. Stir well, then cover and refrigerate.
In a saucepan, bring cream and remaining milk to a simmer, then remove from heat. Meanwhile, beat egg yolks with sugar until pale and fluffy, about 3 minutes. Pour 1/2 cup of the hot cream-milk mixture into the egg mixture, whisking as you go, then transfer it all back into the pot to create a loose custard. Heat the custard over medium heat, stirring constantly, until it reaches 175° on an instant-read thermometer (this is the point at which it will thicken noticeably). Remove from heat, add salt and vanilla extract, and pour through a strainer into a bowl. Stir in Grapenuts, then place in refrigerator to chill 6 to 12 hours.

Once mixture has finished chilling, it should register between 35° and 40° on an instant-read thermometer. Remove the now-plumped raisins from the refrigerator and stir them into the custard, discarding any extra milk. Pour mixture into ice-cream maker, leaving 3/4 inch at the top to allow for expansion, and prepare according to freezer instructions.

Allow 6 to 12 hours to chill.

Coconut Lime Icecream

Ingredients:
1 cup of coconut milk powder
1/4 cup warm water
300ml carton thickened cream
1 1/2 tbsp lime juice
2 tsp grated lime rind
4 eggs, separated
3/4 cup sugar

Method:
Combine cocunut milk powder and water. Combine in bowl of electric mixer cream, lime juice and rind, egg yokes, sugar and coconut milk powder mixture, beat until thick and creamy. Beat egg whites until still peaks form, fold into cream mixture. Spoon evenly into foil lined 18cm x 28cm lamington pan, freeze until set.

There's a little (but growing) chain of ice-cream parlors around here called Oberweis; best ice cream I've ever had. Devon House is second. Haagen-Dazs isn't bad.

Favorite flavor is anything I haven't had recently - I crave variety more than any one flavor. But I can never go wrong with chocolate.

Coconut Ice Cream

Ingredients:
400g/14 oz can evaporated milk
400g/14oz condensed milk
400g/14oz can coconut milk
fresh grate nutmeg
5ml/1 tsp almond essence
lemon balm sprigs,lime slice and sdredded cocnut, to decorate

Method:
Step 1
Mix together the evaporated, condensed and coconut milk in a large freezrproof bowl and stir in the nutmeg and almond essence.

Step 2
Chill in a freezer for an hour or two until the mixture is semifrozen.

Step 3
Remove from the freezer and whick the mixture with a hand or electric whixk untl it is fluffy and almost double in volume.

Step 4
Pour into a freezer container, then cover and freeze. Soften slightly before serving, decorate with lemon balm, lime slices and shredded coconut.

From here on I have to look at icecream with nuff respect; I did not know that it took so much time, ingredients and work to creat good tasting icecream; but it worth waiting for.
