[Pepper]

One long time ago you posted a couple of recipies, macaroni salad and potato salad(I think) that were prepared without mayo.

I didn't seem them in the archives, beg yuh post them again.

I saw those, but I am really looking for ones without mayo. Sandi had posted a 'summer lite salads' thread a while back. I thought I had it in my recipie file, but me cyant find it. [img]/forums/images/graemlins/frown.gif[/img]

I know I used her lite macaroni salad recipie, but now I want the potato one. I hope I'm not mistaken that there was one for potato (di brain a get ole) [img]/forums/images/graemlins/blush.gif[/img]

LOL, is not me. Its my cousin's vegan husband. She wants to make potato salad wid vegan mayo. bleeech I need to give her another option.

mi fat to, but nat giving up the mayo. i made a waldorf salad wah day wid mayo, den allowed myself to be talked into using 2% yogurt instead for the next batch. after tasting that bland and runny sittn, i swiftly went back to my lovely rich flavourful mayo, and don't regret it.

Here you go... I love this one, only when i'm carb watching!

1/2 cup olive oil
1/4 cup cider vinegar
1 tsp salt
1/2 tsp oregano
1/2 tsp mustard powder
1 small clove garlic (opt.)
4 medium potatoes
1 cup celery,
1 medium onions
1 cup carrots, grated
1 green pepper, slivered
1/4 tsp hot pepper seeded/finely chopped
2 Tbsp fresh parsley,minced
2 scallions, finely chopped

Blend the oil, vinegar, salt, oregano, mustard powder, and garlic

Pour over the hot potatoes, and marinate for at least an hour, or until cool

Add the rest of vegetables and seasonings to marinate potatoes

Refrigerate for about 2 hours and serve on a bed of lettuce.

Serves 6

I only love it when i'm not watching my carb intake other wise i don't eat white potatoes and i hate mayo

Here's a shorter version...

1 2/3 lb Potatoes
1/3 cup Olive oil
1/3 cup Lemon juice
1/3 bn Chopped parsley
2/3 bn Chopped scallions
1/3 bn Chopped fresh mint (optional)
Salt, to taste
1/3 dash Cinnamon

Boil the potatoes until firm, peel when cooled and cube potatoes and add the oil to coat. Add the rest and toss. Place in a large bowl and garnish with radishes, cherry tomatoes, and fresh mint.
