Oh boy I have a new favorite taste treat!
What to do with that left over jerk chicken? I always cook a lot of it and freeze some for later use. Today I tried something new, and mi a tell ya, YUMMY!
Cut up or shread piece of chicken and warm it up:
I fried a flour tortilla until it was crispy, after turning it over, shaped it into a taco shell shape, and blotted with paper towel to drain off excess grease. Added chicken...
Took some jerk marinade and mixed with equal amount of red mexican sauce, I imagine salsa would work as well, and poured it on the chicken...
I minced some onion and chopped some tomato & cilantro and put that on...
Added a little shredded monterey jack cheese and WALLA!
Jerk Chicken Taco!!
YUM YUM I shoulda taken a picture but the puppies ate the cord for my camera so maybe next time, lol!
The flavors did compliment each other, I figured they would because jerk chicken also taste good on cheese pizza too! (with little onion and things)
I'm sure if the flour tortilla was just heated and not fried and it became a burrito it would be great too!
I haven't tried it with a corn tortilla yet, will let ya know....
