Callaloo Recipes!!! Help

The kind farmer at the green market who always hooks me up (one day mi ask im how im manage mek nuh money [img]/forums/images/graemlins/704555_dwl.gif[/img] ) had callaloo this year. It didn't sell too well, [img]/forums/images/graemlins/frown.gif[/img] he wants to bring it back next year an thinks having recipes will help (im show mi wan recipe an mi sey to him..no man a trini bizniss dat). Mi nuh care fe callaloo atall, but mi wan help out..im ask fi "easy to prepare" recipes.

So any suggestions? [img]/forums/images/graemlins/smile.gif[/img]

Here's one from the home page...

Steamed Callaloo


INGREDIENTS :

1 lb. callaloo
1 tablespoon margarine
1 scotch bonnet pepper
1 medium chopped onion
black pepper
salt to taste
1/4 cup water


METHOD:

Wash callaloo leaves
Cut up callaloo leaves in pieces.
Sauté onion in margarine.
Add cut up callaloo leaves, water and stir.
Cover saucepan and cook callalloo are tender.
Add whole scotch bonnet pepper
Sprinkle with pepper and salt.
Simmer then serve with avocado pear.

thanks, SisD..thats the same recipe my mum gave me (minus de pear)..but I could not get any measurements out of her

de wan by gran army plaza.right outside prospect park..according to my mum it was very good..better than the ones in the Korean markets..they have it too..but I think she says its too hard to clean

Callaloo Fritters

2 cups raw callaloo cut up
1/2 an onion
1 tomato
1 tbsp. margarine

Batter
1-1/3 cups all purpose flour
1/4 tsp. salt (optional)
1tsp. baking powder
1 egg
vegetable oil for deep frying

<ul type="square">[*]Heat margarine, saute onion and tomato[*]Add callaloo and steam for about 5-10 minutes[*]Cool and set aside[*]Sift flour, measure, sift again with baking powder and salt[*]Beat egg and add to cooked callaloo[*]Combine egg and callaloo wit flour mixture[*]Heat frying pan and add oil to a depth of 1/2 inch[*]Drop by tbsp., in hot oil and fry[*]Yields 12[/list]

Cream of Callaloo Soup

2 tbsp. butter
2 tbsp. flour
2 cups milk
1 onin, chopped
1/2 lb. callaloo
salt and pepper to taste

<ul type="square">[*]Wash and boil callaloo (reserve water)[*]Put callaloo in blender container with about 1 cup of water fro boiled callaloo and process on high until smooth[*]Heat saucepan. Add butter and saute onion[*]Add flour and make a blone roux. (white sauce)[*]Pour cold milk on hot roux and stir with wooden spoon until flour is cooked and milk thicken[*]Add salt, pepper and callaloo puree. Stir and simmer 5-10 minutes[*]Serve with boiled shrimps or crisp bacon on top[*]Serves 3-4[/list]

White Sauce

Thin Sauce:
1 tbsp. butter
1 cup milk
1 tbsp. flour
1/4 tsp salt

Medium Sauce:
2 tbsp. butter
1 cup milk
2 tbsp. flour
1/4 tsp. salt

Thick Sauce:
3 tbsp. butter
1 cup milk
3 tbsp flour
1/4 tsp. salt

<ul type="square">[*]Blend the melted butter and flour thoroughly (to make a blonde roux)[*]Gradually add the cold milk while heating slowly[*]Heat and stir constantly until smooth and thickened[*]Cover over steam for 10 minutes longer then add salt[*]Yield 1 cup[/list]

For a smooth sauce if the roux is hot, the milk should be cold and vice versa

I have them growing wild in my back yard, these are the wild ones you have to pick them very young. when I was in Brooklyn I bought them at a Veggi stand at Nostrand and Sterling then when I moved to Clinton hill there was a place on Myrtle Ave. I fry up some Bacon dry in a sauce pan drain off some of the oil, then put the chopped up callalo, stem stripped of course, with about ¼ cup water, a little black pepper and salt to taste. It only takes a few minutes to cook. Then serve

ie sweet to ***...just make sure you soak the salt fish a couple of times and maybe omit the added salt that's in the fritters receipe
