Pumpkin Soup

Good Morning (((Grandma2))))

Yesterday, I was down in the bush and got a nice piece of pumpkin. I want to make the beef soup w/ pumpkin but don't know where to start.

Also, Carl says something about pumpkin rice, never heard of that before but I wouldn't mind trying that as well.

going to dig up the recipe and post it later...I got it from my jamaican connection

Pumpkin Beef Soup

1 1/2 lb beef (neck bones are good)
2 lbs pumpkin, peeled an diced
2 cloves garlic
1-2 sprigs thyme
6 pimento seed
2 stalks escallion, ( or I onion)
1 whole Scotch Bonnet
1/2 tsp black pepper
1 teaspoon salt
flour for dumplin
1 lb yam
1 chocho peeled an diced
1 sweet potato, peeled and diced
1 turnip peeled and diced
2 small carrot peeled and diced
1 med coco, peeled and diced
1 pack cock soup or pumpkin

Place pumpkin,chocho,turnip,carrot and garlic in large pot, cover with enough water to cover completely bring to boil,add meat. then lower heat and cover pot and simmer for about 2 hours or until meat is tender. Add water if necessary during cooking. then add the rest of ingredients
dumplins,yam,coco,sweet potato,season to taste.

mi like fi add a little margarine.simmer for about 30 minutes. make sure its not too thick,if so add more water.

Pumpkin Rice

1 lb pumpkin
4 cups water
1 packet cock soup
1 sprig thyme
2 stalks escallion (chopped)
2 cups brown rice
4 slice scotch bonnet pepper
3 table spoon maRgarine
1 teaspoon salt
1/2 teaspoon b.pepper

peel and cube pumpkin and put to boil in the 4 cups of water until soft but not totally mashed.
add cock soup, thyme,salt,pepper and chopped escallion.
wash rice and stir into the boiling liquid. Add scotch bonnet pepper and margarine.
lower the flame and steam for about 30 minutes.

I think G2 is doing the ride on thursdays and fridays now.

Pasta with Pumpkin and Basil

1 Lb. Bow tie pasta ---> shell,ran out of bowtie
1 Lg. garlic clove, chopped ---> 2 cloves,we love it
1/4 tsp. crushed red pepper
1/4 canned pumpkin ---> 2 cup of the Jamaican pumpkin cooked
1 stick unsalted butter @ room temp.
1/2 tsp. salt
1/8 tsp. nutmeg
1/4 freshly grated Parmesan cheese plus extra for serving
1/2 cup fresh basil leaves coarsely chopped---> 1/4 cup fresh from the garden
lots of fresh ground pepper

Combine garlic, red pepper, pumpkin, butter, salt, pepper, nutmeg, and cheese in pasta serving bowl. Set aside to warm to room temp. or place a heatproof bowl over pasta pot to warm the ingredients and melt the butter while heating the water. Once water boils, remove bowl and set aside.

Cook pasta in large pot, drain well and immediately add to sauce in bowl. Sprinkle w/basil and toss. Serve immediately w/extra cheese. Serves 4 - 6.

i put the pasta in the bowl first,then add the sauce. i love the shells cause it grabbed the sauce in every one. i also could get a better coverage pourin the sauce over top you all should try this.

I love pumpkin soup, it is soo good and since mi get 2 nice piece of pumpkin, mi nuh waan dem go to waste.

Mi went up to di farm, di one mi tell you about. Him gi mi calaloo, peppa, corn, plus we buy a whole goat.

Di guy likes me so mi get extra goat liva and carl's dad got pig head and cow foot.

Talk about true country living - lol

well babydoll yu knoh it really dont matter how much as long as is not de whole pumpkin

but a tin of milk weigh bout a lb so just balance it in yu hand

babydoll yu nuh have no chinese store near yu, caw dem sell those things yu knoh....but if yu have to walk but the stuff an kip dem a yu house well worth the trip

plus yu can freeze the soup to up to six months girl

Interesting....never thought of that before...

I have half of a small one, so I will make the soup w/ dat.

Then I have a 1/3 of a big one so I will make the rice rice w/ that one.
