When I stopped eating meat, Mama made some adjustments to some of my favorite dishes. She invented this vegi meatloaf and now I make it myself.
2 boxes Boca Crumbles
2 tbsp worchestershire sauce
2 beaten eggs
1/2 chopped green bell pepper
1/8 cup chopped onion
1 cup seasoned bread crumbs
pepper
1 tsp minced garlic
Mix defrosted Boca Crumbles, worch. sauce, eggs, bell pepper, onion, bread crumbs, pepper, and garlic in baking pan or glass baking dish. Bake in preheated 350 degree oven for 45 min.
Sauce:
1 jar pasta sauce (I use Ragu green pepper and mushroom)
2 dashes worchestershire sauce
dashes of garlic salt
dashes of seasoning salt
dashes of pepper
Heat pasta sauce, worch. sauce and seasonings in saucepan.
After 45 min of loaf cooking, remove from oven. top w/cooked pasta sauce. Put back in oven for 15 minutes.
Remove and serve w/mashed potatoes, green beans, corn (whatever).
