here is a special receipe passed down from my German ancestry...

Dark German Chocolate Cake with Toasted Almond-Coconut Goo

1 1/4 cups flaked or shredded coconut
1 1/4 cups sliced almonds
3 cups sugar
2 3/4 cups all-purpose flour
1 cup plus 2 tablespoons best-quality cocoa (recommended: Dutch-process)
2 1/4 teaspoons baking powder
2 1/4 teaspoons baking soda
1 1/2 teaspoons salt
3 eggs
1 1/2 cups whole, 2 percent fat, or 1 percent fat milk
3/4 cup vegetable oil
1 tablespoon pure vanilla extract
1 1/2 cups very hot water
Caramel:
1 1/2 cups sugar
1/3 cup water
1 1/2 cups heavy cream


Preheat the oven to 350 degrees.
Spread the coconut and almonds on separate baking sheets and toast, stirring occasionally, just until golden brown, 10 to 15 minutes. Set aside to cool.

Line the bottom and sides of a 14 by 17-inch baking sheet (with sides) with parchment or waxed paper. Sift together the sugar, flour, cocoa, baking powder, baking soda and salt. Transfer to a mixer fitted with a whisk attachment (or use a hand mixer) and blend briefly.

In a medium bowl, whisk together the eggs, milk, oil and vanilla extract. Add to the dry ingredients and mix at low speed for 5 minutes. Gradually add the hot water, mixing at low speed just until combined. The batter will be quite thin. Pour the batter into the prepared pan. Bake until a tester inserted in the center of the cake comes out clean (a few crumbs are okay), 25 to 30 minutes. Let cool in the pan.

Caramel: Pour the sugar into the center of a deep saucepan. Carefully pour the water around the sugar, trying not to splash any sugar onto the sides of the pan. Do not stir; gently draw your finger through the center of the sugar to moisten it. Over medium-high heat, bring to a boil without stirring. Reduce the heat to a fast simmer and cook without stirring until amber-caramel in color, 10 to 20 minutes. Immediately remove from the heat. Using a wooden spoon, slowly and carefully stir in the cream (it will bubble up and may splatter). Stir in the toasted coconut and almonds. Set aside.

When ready to serve, cut the room-temperature cake in the pan into 6 even strips, each 3 inches wide. Using diagonal strokes of the knife, cut each strip into 4 triangles. If the sauce has stiffened, rewarm it over low heat (or in a microwave) until softened. Place a triangle

Chocolate Layer Cake with Coconut Pecan Frosting
A German chocolate cake from scratch, with a coconut pecan frosting and filling.
INGREDIENTS:
• 4 ounces Baker's German's Sweet Chocolate, melted and cooled
• 2 1/3 cup cake flour
• 1 1/2 cups sugar
• 1 teaspoon baking soda
• 1/2 teaspoon baking powder
• 1/2 teaspoon salt
• 2/3 cup butter, room temperature
• 1 cup buttermilk, divided
• 1 teaspoon vanilla
• 2 eggs
• Coconut pecan frosting and filling, below
PREPARATION:
Grease two 9-inch layer cake pans and line bottoms with waxed paper. Sift together flour, sugar, baking soda, baking powder, and salt. Cream butter; add flour mixture, 3/4 cup buttermilk, and vanilla. Stir until dry ingredients are moistened; beat at medium speed of electric mixer for 2 minutes, scraping bowl from time to time. Add melted chocolate, eggs, and remaining 1/4 cup buttermilk. Beat 1 minute longer. Pour batter into prepared cake pans. Bake in a preheated 350° oven for about 35 minutes, or until a wooden pick inserted in the center comes out clean. Cool in pans on rack for 15 minutes. Remove and cool completely on racks. Frost with coconut pecan frosting, below.

Coconut Pecan Frosting and Filling
• 3/4 cup evaporated milk
• 1/2 cup light brown sugar, firmly packed
• 1/2 cup granulated sugar
• 1/2 cup butter
• 1 teaspoon vanilla
• 3 egg yolks, slightly beaten
• 1 1/3 cups Baker's Angel Flake coconut (3-ounce can)
• 1 cup chopped pecans
In a saucepan over medium heat, combine milk, sugars, butter, and vanilla. Bring to a full boil, stirring constantly. Remove from heat (mixture might appear a bit curdled). Quickly stir a small amount of the hot liquid into the beaten egg yolks; return egg yolk mixture to the hot mixture in saucepan and blend well. Return to a boil, stirring constantly. Remove from heat and stir in coconut and pecans. Cool to spreading consistency, beating occasionally.

Italian Lover's Cake

1 box chocolate cake mix (plus necessary ingredients)
2 lbs. ricotta cheese
1/4 c. sugar
4 eggs
1 tsp. vanilla
1 (3 3/4 oz.) box instant chocolate pudding
1 c. milk
1 (8 oz.) Cool Whip for topping

Mix cake as directed on box.

Pour into greased and floured 9 x 13 inch pan.

In separate bowl combine ricotta, sugar, eggs and vanilla; mix well. Spoon over unbaked cake top.

Bake at 350 degrees for 1 hour. Cool. Mix pudding with milk, fold in whipped topping (Cool Whip). Spoon over cake and refrigerate.

When the cake comes out, the ricotta layer is on the bottom. This cake is rich, but not overly sweet. My sister's favorite. I make it for lots of family parties.
