Okay I have not found the other pictures yet, but lets move forward.

First things:
Have 3 hours to spare
Use your heaviest pot. (Dutchy is cool but I don't trust some of those Mystery metal Dutch Pots, so I stick, {well not stick} with stainless steel)
You must use Thyme
You must use escallion
You must Coconut milk
You must use yellow cornmeal (non-self rising)
You must have a long cooking spoon.
Now here the skinny. Turn cornmeal will always stick no matter what pot you use. You are intending to turn the cooking cornmeal about 3 to 4 times after the initial addition to the pot.
That said
<ul type="square">[*]7 cups of liquid to 1 1/2 cups of Yellow Corn Meal (I use two cups of coconut milk)[*]2 stalks of escallion (chopped if you like)[*]1 head of garlic (or less, just mashed each clove)[*]1/2-1 teaspoon of sea salt (if you like)[*]4 x pimento (allspice)[*]4 x cloves[*]1 heavy pot[/list]

Add 5 1/2 cups of liquid to the pot (including all of the coconut milk)
Add all the other ingredients to the pot of water (excluding the cornmeal). Cover, bring to a boil.
Put the reminder 1 1/2 cups of water in a bowl then add cornmeal, will stirring slow. The aim is to make a slurry devoid of lumps, which you will add to the boiling pot.
When the pot is boiling, carefully add the cornmeal slurry to the pot.
Stir this in.

Here is the critical moment:

Reduce the flame to about 3 stir occasionally to prevent a hard stick, until you see the first bubble on the surface, now reduce the flame to 1 on an electric stove, go upstairs and read a book.

If you use 1 1/2 cups of cornmeal the cooking time will be about 2 1/2 hours in that time come downstairs and turn over the mixture at least three times.

At the end of all this you should have something looking like a pudding that crumbles easily.

I guess you can add different things to it like carrots, beans or saltfish and such.

my mother never cooked it much, growing up, so I didnt know the process...

Okay I was coming to that.
Don't mess with it, my mom in the 70s started adding all manner of things to it...it never really work. Her favourite was red kidney beans.
Better to eat it accompanied with some salt thing(as they say in the country)

There are only three things that you can reasonably add to Tun Cornmeal when amking it. There are as follows:

Salt Fish
Corn Beef
Poak Skin

When man a run boat mi si dem add red herring, mackerel and even sardines. Since me nuh partake of none of the above I just leave as is, then cook something to go with it.
