Eggplant was on sale at my market this week, 2 for $1.
I put a bit of oil in a pan and cooked slices (after peeling off the skin) for about 4 minutes each side, then took them off the fire.
Crushed 4 cloves of garlic and chopped 4-5 slices of jalapeño and mashed it all together...it's REALLY good!
