Marilyn, as usual, your way of conveying all that happened during your trip is just ..... well, you know [img]/forums/images/graemlins/laugh.gif[/img] . I was going back through your thread admiring the photography as my son and his friend hang over my shoulder trying to rush me off the computer (so they can check on something they're trying to buy on ebay ). They saw this picture of your food and think that the salmon patties look like they're something they should have today. I know this ain't A&S, but can you hook a sister up with the recipe? (don't worry about specifics, just give me a general idea and I'll take it from there [img]/forums/images/graemlins/laugh.gif[/img] ).

I, too, offer my sympathy for your student. It's a crying shame and it's obvious how much you care. Hang in there and may some unexpected windfall have you back in JA sooner than you ever expected.

Ok
So you take the can of salmon and drain off the juices and take out the little bones. In a bowl you mix the salmon, about half a green bell pepper chopped fine, small onion or half of a larger one chopped fine, some bread crumbs (didn't have this in Ja.), seasoned or plain, a dash or two of Mccormick's season all, and two eggs. Make patties, cook on both sides in small amount of oil, or spray skillet with Pam for low cal.

That's it.

I like mine with buttered rice, and ketchup on the salmon pattie.

I know it's been so long since I've been on the board. Classy quietly checked up on me a few weeks ago and uplifted me with her PM. I cried when I saw the trip report post cause I should have been there. I had to cancel my trip for March and it broke my heart so much I couldn't even visit the board (in addition to my crazy life keeping me away). Thank you thank you thank you for your exquisite way of touching all of our hearts and carrying us literally through your escapades in Jamaica. The Lord God knew what he was doing when he created a beautiful "kindred spirit" like you. (I read Anne of Green Gables AND watched the television series too!!) Thanks for taking so many of us on your trip and showing how one person can make such a difference to others. I just think about all the good your soul-felt actions have done for people in Jamaica, people on this board, and most certainly the children in your school. I'm truly sorry to hear about Curley. At least you helped to raise the curtain on what was going on and to nudge that teacher to retirement and away from students.

Kindred Spirit ~ thank you for your generous and loving comments. Meeting you here on the board was serendipity. I have felt this same connection with Grandma 2, Our much loved and much missed Marcia, and an early boardite First Human. Some people will say, oh this is just a message board and only connection is through a computer so it's not really real...and to them I say ~ not so! These connections are real and the fact that we have not YET met face to face doesn't make our connection and less real.
I'm so sorry about your student. I know you love your kids, and they are lucky to have you there advocating for them.
