How does it work?
What exactly is it?

I'm looking into a SCSI Hard drive system for the studio.

Would this type of system be able to copy files from one drive to de nex every 8 hours or so curruption is minimalized?

0+1 and

Raid 10 is the best fast read and write. Raid 5 second best slower read, but fast write. Raid 10 is more expensive. Raid protects your data by mirroring the data to another disk if one fail.

RAID (Redundant Array of Independent Disks) - a method used to standardize and categorize fault-tolerant disk systems. RAID levels provide various mixes of performance, reliability, and cost. Three of the the most implemented RAID levels are Level 0 (striping), Level 1 (mirroring), and Level 5 (RAID-5).

RAID disk systems may offer advantages during
audio and video capture.
