System Restore is like a bookmark in a book you are reading. In order to restore to a point you need to place the bookmark. If you created a restore point (bookmark) on Monday then you can restore it via the administration tools > system restore. If you have not created a restore point then you are hosed, or it will restore to a date when you did place a restore point.

So did you create a restore point on Monday?
