The laws say that you can't put or use these cylinders inside your house where trapped released gas could likely cause an explosion .

But outside it is vewy, vewy difficult to have any sort of accident because gas grills are set up to be safe, to avoid lawsuits.

Once you understand the safety rules gas grills are little different from gas ranges except that gas grills are always outside where any possible gas leaks are dissipated by the open air and explosions nearly impossible.

Most grills now have electronic (battery powered) igniters so you don't have to light them with a match. My old Weber gas grill is about ten years old and the gas trap near the igniter has corroded away making the igniter non-functional and I do have to light the grill with a (wooden) match.

I have been cooking on gas grills for about 15-20 years and have never had any problems.

BUT.... if you don't feel safe there's no sense in you having a gas grill.

I have a gas grill and made a wood chip smoking tray out of a 6 x 8" cast iron tray into which I drilled a good number of holes. This sits on top of the heat deflector bars under the grills and above the flame. Once loaded with soaked wood chips, it takes about 12 minutes for the smoke to get going and they do smoke. Since I'm the cook I wind up standing close to the smoking grill and both my clothes and my hair wind up smelling like I've been in a fire.

I use store bought mesquite chips mixed with apple wood chips that I get from pruning the dead branches off an old apple tree that is buried in the woods on semi-public property.

If we lived in close approximation to anyone I'm sure I'd get either complaints about all the smoke or a ready supply of dinner guests.

I use jerk seasoning/paste on my chicken and pork but my wife and some others just really want that smoky grilled flavor with no sauce.

Grilled zucchini, yellow squash, mushrooms, sugar snap peas, Vidalia onions and sweet red Bell peppers marinated in a soy/sesame oil/ FRESH garlic and grated ginger root marinade are also a smoky favorite.

Strange as it seems, all I or most of my immediate family and friends have ever eaten is BOILED sweet corn but after working a craft fair at which a Vietnamese food vendor served up GRILLED sweet corn with all the kernels browned so nicely, that is what I started doing and now that is all anyone wants .
I can remember seeing food cart people in Negril selling corn this way but never tried it.

Idaho potatoes microwaved til just done, quartered the long way, brushed with oil and browned on the grill then served with sour cream, garlic chives and toasted sesame seeds are also a good item here.

Of course there's no end to the possibilities.

Oh JC now you have my hungry for grilled corn. I still have a supply of fresh picked/frozen corn on the cob in the freezer. I buy it at the farmers market and bring it home and throw them in the freezer just the way they are and they turn out pretty great. (much better than store bought since it is frozen within a couple of hours from picked) I used to do the blanch/ slice from the cob method but this is so much easier..

When I had a gas grill I used to do the same thing as you do, and even now, I will soak up some apple wood from one of my trees and throw them on the coals.

Gosh, all of this talk is making me hungry as heck.



Funny, before this thread I never once considered that neighbors would be bothered by the smell of grilling smoke. But then again, I haven't had neighbors in long long time.

Every once in a while if the wind is right I catch the smell of a neighbor hundreds of feet away grilling beef of some sort so I know what is probably a great deal more smoke mixed with the smell of garlicky marinades and jerk seasoning coming from my grill just has to be causing a great deal of salivating downwind from my deck.

You don't need to use charcoal starter, just the other day I did it the old fashioned way with a little paper and kindling under the coals.

Speaking of coals, I don't much care for the briquettes that are commonly sold. At the hardware store I found this..

The coals last forever, I can smoke a rack of ribs for 5- 6 hours and never add another chunk.
