Amother favorite is called Italian Lover's Cake

Mix up a box cake mix/ yellow or chocolate. I prefer dark chocolate.

pour it into a 9x11 bgreased & floured pan.

Mix 2 lbs ricotta cheese
4 eggs
3/4 cup sugar
1 tsp vanilla

pour over cake batter & bake @350 f for 1 hour.

when the cake is done the ricotta layer is on the bottom & the chocolate on the top.

This cake is luscious alone or with a topping made with 1 box dark chocolate instant pudding mix
1 cup milk
1 small tub of cool whip.

mix the pudding & milk
Let it stand a few minuts then fold into cool whip until well blended.

yummy.

fruit cake aka christmas cake aka black cake ... but it really is a pudding

sweet potato pudding/cornmeal pudding

pineapple upside down cake and unlike mi fren whe can bake good from scratch the only cake mi bake from scratch is fruit cake...

That's what I meant when I said cakes. I don't know how to make a cake from scratch, that'll come soon. But for now, I make <span style="text-decoration: line-through">good</span>great box cakes. </span>

I am going to try it this sunday..i just have to print it out so I can have the directions in front of me..about how long it takes and on what oven setting like 375-400 degrees?

Carrot-pineapple cake


2 cups sifted self rising flour
2 teaspoons cinnamon
1 1/2 cups cooking (salad) oil
2 cups sugar
4 eggs
2 cups finely grated carrots
1 can (8 1/4 ounce) crushed pineapple (DO NOT DRAIN)
3/4 cup chopped nuts

Heat oven to 325 degrees Fahrenheit. Grease thoroughly and lightly dust with flour two 9-inch square pans or three 8- inch round pans. Sift flour and cinnamon together. Combine oil, sugar and eggs in a large mixer bowl and beat thoroughly. Add flour mixture and beat to blend ingredients. Fold in carrots, pineapple and nuts. Pour batter into prepared pans and bake until cake begins to pull away from sides of pans (about 1 hour). Cool 15 minutes and remove from pan.

I use Myers...because its dark and sweet

This thread reminded me that I plan to make Banana Nut Cake tonight(if only to use up the bananas I have before they go bad). It's my first time making them in this new place and using the new oven-so I'm hoping it comes out deliciouso as it has in the past!
