I saw a recipe in the Observer this week for a callaloo stuffed whole roasted pumpkin....my farmer has plenty of different cooking pumpkins, but there's no fresh callaloo at the market so I substituted some young turnip greens....

how do you make stewed codfish? is that the same as cook-up?

kinda.
mi sear di codfish in likkle olive oil.
then mi cook it down in likkle tomato/ketchup, onion, green pepper, carrot likkle picka pepper sauce.

I seasoned it with thyme, basil and adobo. He loved it. The brats didn't. But then, the brats don't seem to like anything if it's not covered in ketchup. We're going through something like a bottle of ketchup a week. </span>
