chinese yam is very similar to the yam weh dem call renta or sweet yam. it's in season now. it's straight, smooth and easy to peel. the black fungus are what's called wood ears. you can get them dried in asian supermarkets.



Seasoning&amp;#65306;
1/2 tsp sugar,
1 tsp salt,
1 tsp essence of chicken,
5 tsp olive oil,

Before cooking:
1.Give black fungus a long soak before cooking then clean it

2.Skin chinese yam and slice it.
3.Mince the gailic and set aside.

Cooking processes:
1.Scald the sliced chinese yam in the boiling water about 30 seconds.

2.Stir-fry the garlic with olive oil over the medium heat until the garlic appears golden in colour.

3.Add in sliced chinese yam and turn the heat down and stir briefly and let cook for about 3 minutes.

4.Add in black fungus without water and flavour with a little salt and essence of chicken .

5.Simmer for 3-5 minutes until all are cooked and flavour with a little more sale and sugar if desired .

people post pics of the recipes so you know whether you want to try it or not.

Now here's a recipe:
For Jerk Tofu:
Slice tofu, season with season salt (not too much). freeze overnight. (freezing tofu gives it a firmer texture)
Defrost tofu. You can dip the pieces in flour and fry them too before baking in a jerk sauce that also creates a firmer texture.
For a jerk sauce i like to sautee onion and garlic, add jerk paste (walkerswood) maybe some guiness, a little lime, a little honey. Then bake the tofu pieces at 350 until the sauce reduces a bit. Tofu picks up the flavor of whatever you cook it in, baking like this makes the tofu get the flavor inside and outside.

Veggie Chunks, Spanish rice, candied yams and tomatis

Soak veggie chunks in salt water for an hour then drain
heat pot wid oil
sautee onions, tomatoes, scallion, thyme, and garlic in oil
add veggie chunks and stir
and seasoning (soy sauce, seasoning salt, onion powder, garlic powder, likkle black pepper, etcetera etcetera)
water
cover and steam
add a can of mixed vegetables
serve, eat, digest

Jazz~ there are many brands of tofu and trust me they don't all taste the same. Typically tofu is bland tasting, not much flavor at all, BUT sometimes it can taste sour. If you buy tofu in bulk at the health food store then you need to place it in a container of fresh water before you store it in the refrigerator. You also need to change the water that tofu is in at least every 2 days, or once a package is opened. It will really sour on you if you don't. But some tofu is mild and creamy, others are firmer and yes freezing it first before you fry it or bake it in slices, it helps to change the texture so it stays together, rather then falling apart.

Not boasting, but years ago, like in the 70's I taught vegetarian cooking classes and specialized in many ways to prepare tofu. The thing is, that's a whole lot of information to put out here.

Tamari is soy sauce that is naturally fermented and has no salt added. This makes it have flavor, nice flavor instead of just something brown and salty like some soy sauce.

I know you're excited to try a diet without meat and it most likely is a good change. I believe that our bodies tell us what we need and if you feel the need to change, then try it out.

If you have a Trader Joes by your house, this is the BEST place to buy food for you vege diet. They have made it so simple, it's crazy how much good food you can buy there already or partially prepared. You can get jars of fabulous sauces and pastes and things that go into / onto vegetables that it really takes the work out of it. Also their prices are really reasonable. BTW, they have a seasoning that if I remember is called seasoning 21, I used to use it on almost everything. A great seasoning to keep in the kitchen.

If not, then most Asian and Indian stores have some things to mix it up and keep it interesting.

I was thinking of adding recipes here, but I have no idea in what direction you're going. Like Italian? Chinese? Indian? Jamaican?

I really don't have any particular type of cuisine in mind... I love my Jamaican food - so I figured that any recipe I came across I could add some jamaican spices to give it that taste...

I am going to buy some tofu and experiment with it this weekend... Jerk tofu??? mi wi mek oonu know how it turn out.

I did go on his website but I didn't see any pieces that grabbed me immediately... I promised myself I would check back periodically and it just kinda slipped my mind - I am gonna go check it out again soon. thank you
