penne pasta and shrimp alfredo

shrimp
basil
parsley
italian seasoning
salt
penne pasta
red pepper flakes
a dash of ocho rios complete seasoning
favrite alfredo cheezy sauce

bwile penne pasta
drain and set aside (I like to pour virgin olive oil ova fimi while it sittn there

inna wan dutchie saute shrimp on high flame wid a dash of alla di seasonings dem up suh

put shrimp inna wan bowl return pot to flame put likke olive ile in di pot an add di pasta (that's already cooked al dente) suh afta dat u mix in di shrimp (remove it from di wata - an mi a chat bout di nuff nuff wata wat di shrimp may give off during cooking pour one jar of di alfredo sauce and season to taste

mix in well an turn flame dung really low mek it stay deh simma and if by di time u done none leff (mi always a taste out fi mi ) serve hot

thailand curry chicken
Chilli dogs (don't ask)
schew peas
salt mackrel and green banana and dumplin
beef soup (fi mi style)
lo mein
fish soup (fi mi style)
curry tofu
oven fried chicken

o good gawd. i'm such a fantastic cook it's hard to name just ten.

lamb taghini

3 tablespoons olive oil, divided
2 pounds lamb meat, cut into 1 1/2 inch cubes
2 teaspoons paprika
1/4 teaspoon ground turmeric
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/2 teaspoon ground cardamom
1 teaspoon kosher salt
1/2 teaspoon ground ginger
1 pinch saffron
3/4 teaspoon garlic powder
3/4 teaspoon ground coriander
2 medium onions, cut into 1-inch cubes
5 carrots, peeled, cut into fourths, then sliced lengthwise into thin strips
3 cloves garlic, minced
1 tablespoon freshly grated ginger
1 lemon, zested
1 (14.5 ounce) can homemade chicken broth or low-sodium canned broth
1 tablespoon sun-dried tomato paste
1 tablespoon honey
1 tablespoon cornstarch (optional)
1 tablespoon water (optional)

DIRECTIONS
Place diced lamb in a bowl, toss with 2 tablespoons of the olive oil, and set aside. In a large resealable bag, toss together the paprika, turmeric, cumin, cayenne, cinnamon, cloves, cardamom, salt, ginger, saffron, garlic powder, and coriander; mix well. Add the lamb to the bag, and toss around to coat well. Refrigerate at least 8 hours, preferably overnight.
Heat 1 tablespoon of olive oil in a large, heavy bottomed pot over medium-high heat. Add 1/3 of the lamb, and brown well. Remove to a plate, and repeat with remaining lamb. Add onions and carrots to the pot and cook for 5 minutes. Stir in the fresh garlic and ginger; continue cooking for an additional 5 minutes. Return the lamb to the pot and stir in the lemon zest, chicken broth, tomato paste, and honey. Bring to a boil, then reduce heat to low, cover, and simmer for 1 1/2 to 2 hours, stirring occasionally, until the meat is tender.
If the consistency of the tagine is too thin, you may thicken it with a mixture of cornstarch and water during the last 5 minutes.

Jazz, this is the hardest Top 10 thing to do on the board Here's a weak attempt...

1. Vietnamese chicken in clay pot
2. Greek lemon roasted potatoes
3. Stew peas wid black beans and smoked turkey wing
4. Gungo stew - only mi maddah can mek dis
5. Gungo peas and rice wid any kine of gravy mix up
6. Grilled salmon with scotch bonnet jelly
7. Twice-cooked curry goat *recipe below
8. Brazilian garlic collard greens
9. Tomato sandwich
10. Maryland crab cakes

<span style="text-decoration: underline">Twice-cooked curry goat </span>(my own recipe)

Cut up goat leg and shoulder into pieces
Rinse with fresh lime water and pat dry
Season with dry seasonings: garlic powder, sea salt, ground pepper, onion powder, likkle dry jerk seasoning.
Put in glass container, seal tightly, then put in fridge overnight.

Next day:
Turn on oven on high. 450 degrees. Yes, dats correct.
Spread seasoned goat pieces evenly on to baking pan.
Put in oven.
After about 20 minutes, watch carefully. Check to see that goat meat has crisp brown edges.

During that time, cut up fresh onions, potato, garlic, and green scotch bonnet.
In heavy cast iron or dutch pot, pour bout 1/2 cup olive oil then add fresh seasonings.
Turn off oven. Transfer goat to dutch pot.
Stir it up. Den add curry stuff - curry powder, coriander, tumeric, thyme - di usual. Add small can of coconut milk. Grate a choops of nutmeg (a Guyanese lady gave me this tip for curries).
Add enough water to stew it down. When boiling, turn down heat and simmer for a long, long time until nice and thick like how you expect it.
