Nyl's ... I have a friend that bakes many hundreds of dozen's of cookies every year - they send to the troops overseas and so on ... a HUGE baking project.

I just asked her how she packaged and shipped so they stayed fresh; she said - it is time consuming ... but - they would wrap each cookie individually in saran wrap, then layer in wax paper & such tin can box - yada yada ...

I thought I heard or read someplace ... that if you pack a piece of white bread along with the cookies ... that can keep them soft and fresh in transport ... but I am not sure.

My mom used to bake and gift to the masses as you are doing. I used to carry on that tradition for a few years ... and now mine has fizzled out this year to just a bit of baking for us.

I am going to shop for a vacuum sealer tonight. If I dont find one that is reasonably priced, I will do what you suggested.


It is truly a heck of a lot of work but I love doing it.

The most expensive thing I own is my time, so to take some time off work to put the baskets together is meaningful coming from type-A personality such as myself!

Anyone every bake with Rice flour?

my friend is gluten intolerant but still wants some cookies

so she said I could bake with rice flour but I am not sure you can use the stuff in the same proportion as you would all purpose flour?

over thanksgiving i ate some rice banana nut bread. just like regular banana nut bread. the only thing is that bread seemed a bit more moist than regular bread, but it still tasted just as good.

I think I'll pick some up tonight and make a batch with it. I cant find anything yet on the web to confirm if I can use hte same ratios or if I have to adjust the amounts. I am assuming rice flour is lighter than regular flour and thus will hold moisture more than the regular stuff.

She can be the guinea pig tomorrow and test drive the batch

Here Nylah, Gluten free flour substituion

Gluten free flours will generally absorb more water than "normal" flours and will also lack the robust structure and "tolerance" typical of gluten containing flours.

Generally speaking, where a biscuit, cookie, sponge, swiss roll or other recipe that bakes in a thin layer contains flour, sugar, butter/margarine and eggs, <span style="font-weight: bold">gluten free flour, plain or self raising, can be substituted directly for wheat flour</span>. However, once you come to adding the dry gluten free flour to the wet ingredients, care needs to be taken in the mixing, which needs to be as gentle and for as short a duration as possible to avoid knocking the carbon dioxide and oxygen from the more fragile gluten free structure, especially in the case of sponges and swiss rolls. The biscuit, sponge or whatever should then be put in the oven as quickly as possible to ensure the maximum possible rise.

tried to make a batch of shortbread with the stuff and it was an unmitigated DISASTER

I have a baking tray of goop at the moment


the blastid package says you dont need a binding agent..just swap out the flour for the regular stuff and obviouslt that is a lie

I'm gonna try again tomorrow with a binding agent cause there must be a way to do this.
