i used to buy the 40lb box of chicken. at that time it was $27. i'd separate them into the ziplock bags with labels so i'd know what they are.

i'd cut, clean, season them up different ways. i'd for instance put curry powder on the ones to be curried.

jerk chicken same way. however, the ones for teriyaki or tempura or something like that i'd just put a little season salt.

when it was time to cook them, i'd take them out in the mornings before i go to work and leave them in the fridge to thaw.

See, that makes it worse if you still have to cook and don't even feel like eating what you cooked. The number of times I would have been happier with a bowl of cereal instead of preparing a hot meal for the family I cannot count.

Since I don't know what I'm going to have the taste for later if I freeze and season, then I generally use goya, green seasoning, and black pepper. Whether I label it or not I can visually see that I already seasoned it and know what to expect. Otherwise, I'm all about the overnight.

Sue, how people left me in that thread asking about oxtail recipes when they knew full well you had one big thing posted on the homepage? I just now realized there was a full menu of recipes up there.

Aww Bizi, you know I'm not complaining. Y'all hooked me up and took my oxtail game to a new level. I guess I was just trying to say I never even knew there was a recipe link on the home page until this new layout. I was kinda fussing at myself for completely missing it all these months.

Much compliments as I get on the oxtails now, I'll never deny that some very patient and helpful Jamaicans on Ja.com lead me through lol.

MI know mi late wid dis - but I season meat and leave in the fridge for up to two days and it is fine...

I season meat and freeze for weeks and it is fine... I usually just put basic seasoning on the meats so when I take it out I can turn it into whatever I need...

eg. mi can add curry powder and mek it curry chicken
add - jerk sauce and fling it inna de oven etc.
