Channa & Aloo

mi ah dead fi some bad, but di smaddy daht usually cook it for me gone back to Trinadad. Di shop weh mi would go in case of emergencies lock

mi bruck down go buy di dry channa, but afta that mi nu know what fi do. PLEASE oonu come help mi wid a recipe mi belly would stop torment mi and for that mi would indebted to oonu forever.

up here in the regular supermawkit dem sell the prepackaged channa curry/spice and I juss buy di canned chick peas an mek it dat way. I don't put potato in mine

cooking dry chick peas...prolly soak over night then boil or pressure cook dem same like red peas????

Instructions:
1. Take a pressure cooker or a stock pot for boiling the chickpeas.
2. Wash the chickpeas and add a litre of water and a pinch of baking soda
3. Leave it overnight for soaking ( If you are in a hurry you can boil it straight away but it will need some more time to boil)
4. Put the muslin cloth which contains the ingredients for boiling.
5.Next day boil the chickpeas for 20 minutes or so ( until soft). ( we do not want overcooked chickpeas as they will turn into a paste, if they are undercooked they are too hard.)

Ingredients for chickpea curry:
# Dry white Chickpeas - 1 cup
# Red ripe tomatoes - 2 cups chopped.
# Green chillies - 2.
# Onion - 1 cup chopped fine.
# Garlic paste - 1/2 tsp
# Ginger paste - 1/2 tsp
# Salt - 1 tsp or to taste
# Oil or ghee(clarified butter) - 2 tablespoons
# Cumin seed - 1/2 teaspoon
# Asafetida - a big pinch.
# Garam masala - 1 tsp
# Red chili powder - 1/2 tsp or to taste.
# Coriander leaves - 1/2 cup chopped.

Preparation:
# Use white large chickpeas. Wash the chickpeas. Add 3 cups of water. Soak for 6-8 hours or overnight.
# Boil or pressure cook till chickpeas are soft. It will take about 20 minutes. Add a little salt while cooking.
# Chop onions, coriander leaves. Chop/slit green chili.
# Puree tomatoes.

Cooking Method:

1. In a deep pan, heat oil/ghee.
2. Add cumin seeds. When they stop spluttering, add onion. Fry till onions turn transparent.
3. Add ginger and garlic paste. Fry for about 5 seconds.
4. Add tomato puree. Cook for about 7-8 minuts or till oil starts separating (floating on top).
5. Add garam masala, asafetida, red chili powder and cooked chickpeas along with the water. Cook for 5 minutes.
6. Add salt. Cook for 5-8 minutes more.
7. Add chopped coriander leaves.

Channa Masala is ready. Garnish with more chopped coriander leaves, onion rings. Serve with any Indian Breads, Such as

Bhatura , Poori , Paratha , Chapati etc.

Aloo Chana (Chickpeas and Potatoes)

Recipe by Manjit Biant, presented at the Club on 3 February 1999.

Serves 4

* 2-3 Tbsp olive oil
* Cumin seeds
* 1 medium onion (chopped)
* 3-4 cloves of garlic (chopped or crushed)
* 1-2 tins of tomatoes to taste
* 2 Tbsp tomato puree
* 1-2 tsp ground cumin to taste
* 1-2 tsp ground coriander, or fresh to taste
* 1-2 tsp salt to taste
* 2 tins of chickpeas
* 2 large potatoes cut into cubes (can pre-cook it for speed)

Heat oil, throw a few cumin seeds in to test temperature, fry onions and garlic until soft and brown (but not burnt). Add tomatoes, spices and salt and stir. Then add puree. Add chickpeas and potato and cook until potato is tender. Tasty when sat a while to absorb flavours. Delicious served with pitta bread and salad.
