Suh skells yuh like di plaka plaka rice

I tried cooking it in a rice cooker once, by time mi peas done cook and mi add the rice the temp of the rice cooker was &quot;off&quot; (too hot) so by time mi add the rice likkel after the cooker shut off


So I would have to cook the peas separately and then cool it likkel and then cook it and di rice in the cooker

Maybe it was the brand rice cooker mi had but mi nuh have time fi all dat fawt so I just do it in my pot and call it a day. Not a fan of rice cookers

LOL - ok Tulip here goes... of course you know the quantity you can adjust depending on how much you want to make - these quantities will serve about 6 people.

1/4 pt. dried red peas
(if using gungo peas use about 1/2 pint)
1 lb rice
2 stalks escallion
thyme
2 tsp salt
pimento
1 tbsp sugar
2 cloves garlic (lightly pressed not cut up)
I whole scotch bonnet pepper (make sure it is not broken - you want the flavor but not the heat)
Milk from 1 dry coconut (cut up coconut flesh ver small and blend with a small amount of water - or you can grate LOL)
Alternatively you can use 1 1/2 can of coconut milk

Soak peas about 2 hours and boil in the same water until just tender but not too soft. Don't use too much water since you will be adding the coconut milk.

When peas are nearly cooked add coconut milk (with the water the liquid should be about twice or 2 1/2 times the amount of rice to be used)

When peas are fully cooked add seasoning and add rice... allow the water to boil up and then reduce the heat and cook on a slow fire...

Stir it with a fork before you serve.

Ok, I want to try the grated coconut but I'm going to make that part of the recipe my friend's project lol.

This is my plan. I will show up back in this thread Sunday with pics of my handiwork. I also intend to cook oxtails if they are not $20 for 4 this week lol. Otherwise, it will be a different meat.

I'm kind of excited about this. With everybody's advice, maybe I can finally make some good rice and peas.

Jazz,,you forget to tell her to make sure when turning the rice with fork---dont bust the scotch bonnet..
I like cow peas or gungo peas,,,not fussy with red peas
and I DONT like can peas,,,only dry ones to soak overnite

I did bust it one time and we blew our noses for hours. I'll watch out not to bust it.
