Needhams
¾ cup mashed potatoes (unseasoned)
½ tsp salt
2 1 lb pkgs of confectioners sugar
1 stick of oleo
8 oz or ½ lb flaked coconut
2 tsp vanilla
Melt oleo on top of double boiler. Add salt, mashed potatoes, confect sugar, flaked coconut and vanilla. Mix well, turn on buttered cookie sheet. Let harden, cut into squares to dip in chocolate mixture.
Chocolate Mixture
1 – 12 oz pkg of choc bits
4 squares unsweetened chocolate
½ cake paraffin (2 ½ x 3 ½)
Use double boiler again, melt paraffin first, then add squares of chocolate, last chocolate bits. Melt all, stir well. Pick up squares w/toothpicks and dip into melted chocolate, put on wax paper to harden.

Chocolate Toffee Cookie Crunch Bars
Cookie Base:
2 cups finely crushed vanilla wafers (about 50)
¼ cup firmly packed brown sugar
1/3 cup butter, melted
Toffee layer:
½ cup butter
½ cup firmly packed brown sugar
1 6 oz pkg (1 Cup) semi sweet chocolate morsels
½ cup finely chopped nuts
Cookie Base: Preheat oven to 350. in bowl, combine wafer crumbs and brown sugar. Stir in butter, press into 13x8 baking pan....i use a flat spatula for the pressing.
Bake at 350 for 8 minutes.
Toffee Layer:
In saucepan, combine butter and brown sugar. Cook over moderate heat stirring constantly, until mixture comes to a boil. Boil for 1 minute....okay maybe a little more than a minute. Pour immediately over baked base and spread to the edges of the crust...carefully.
Bake at 350 for 10 minutes....the toffee mixture will kinda sink down into the base.
Let stand 2 minutes and sprinkle chocolate morsels on top. Let stand 2-3 minutes until morsels are shiny and soft, spread evenly. Sprinkle with chopped nuts. Chill. Break into irregular pieces.

Almond Rocco Cookies
1 cup butter
1/2 cup brown sugar
1/2 cup white sugar
1 egg yoke
1 teaspoon vanilla
2 cups flour
10 oz milk chocolate
1 cup finely chopped toasted almonds
Cream butter and sugar, add egg yolk and vanilla. Stir in flour.Spread mixture thinly on greased cookie sheet. Bake at 350 degrees
for 15 to 20 minutes. Melt chocolate over hot water or on medium power in the micro wave and spread over warm baked cookies. Sprinkle on nuts and press them firmly. Cut in bars while still warm. Let stand until chocolate is dry. enjoy

White Christmas Fudge
2/12 Cups Confectioners sugar
2/3-cup milk
¼ cup butter
12 oz white chocolate, coarsely chopped
½ tsp almond extract
¾ cup dried cherries, cranberries and apricot, coarsely chopped
¾ cup toasted almond slices
In a heavy bottom saucepan, Wisk together sugar and milk. Add butter and bring to a boil, stirring constantly.
Boil 5mins without stirring.
Reduce heat to low add chocolate and almond extract. Wisk until chocolate melts and smooth.
Stir in dried fruits and almonds.
Pour into an 8-inch square pan line with foil and lightly oil.
Cover and chill until firm. Cut in squares.
Bake Apple pudding
Caramel
½ cup sugar
¼ cup water
Filling
½ cup butter
½ cup brown sugar
3 eggs
½ cup dried cranberries
2 tart apples peeled and chopped
Zest and juice of 1 orange
½ cup apple cider
¼ cup flour
11/2-cup fresh breadcrumbs
Pinch of salt
1 tsp cinnamon
To make caramel combine water and sugar in a pot heat until sugar is melted, bring to boil and boil until Carmel turns golden colors.
Pour into baking bowl set aside
Cream butter and sugar until light and fluffy, add eggs, one at a time.
Stir in cranberries, apples, juice and zest of orange and cider. Combine flour, breadcrumbs, salt and cinnamon.
Stir into apple mixture mix well.
Pour into bowl and cover with foil put into a roasting pan with water bake for 45 mins, remove foil and bake for another 40minsor until cook. Serve warm with crème anglaise or ice cream

loops oh boy, ok, made the toffee bars,hear dis now
1 mi tink mi oven too hot,cause it start to burn at 5 mins,so mi tek it out
2 mek mi toffee an thought it would spread, no sah, so most of it ended up one place. had to take it out of the oven again in 5 mins.
3 end result,the middle taste nice the edges weh bun an no toffee mi dash weh
all in all its really good,but mi have to re make it one day.

The christmas baking has commenced. Yesterday, was the sweets. Made the needhams (second batch), Linzer Torte Bars, Chunky Brownies with a Crust, Spiced Nuts and Mini Cheesecakes. Moving on to the appetizers this afternoon.
So, I'm sharing...
Linzer Torte Bars
1 cup all-purpose flour
1 cup powdered sugar
1 cup ground walnuts
1/2 cup margarine or butter softened
1/2 tsp ground cinnamon
2/3 cup red raspberry preserves
Heat oven to 375. Mix all ingredients except preserves until crumbly. Press 2/3 of the mixture in ungreased square pan 9x9x2. Spread with preserves. Sprinkle with remaining crumbs. Press gently into preserves. Bake at 20-25 minutes or until light golden brown. Cool completely.
I modified this recipe easily to fit in a 8x12 pan. Also...discovered the beauty of my pampered chef chopper when grinding the walnuts for this recipe. [img]/forums/images/graemlins/laugh.gif[/img]

Spiced Nuts
1 egg white
1 Tblsp cold water
1 lb pecan halves
1/2 cup sugar
1/4 tsp salt
1 tsp cinnamon
Beat egg white and water til frothy. Add pecans to frothy mix and stir til well coated. Blend last 3 ingredients. Add to pecan mixture and stir til well coated. Spread nuts on greased cookie sheet. Bake 1 hour at 225. Stir every 15 minutes. Serve

This is a slightly different (and attractive)twist on your average brownie...
Chunky Brownies with a crust
1 1/4 cups unsifted flour
1/4 cup sugar
1/2 cup cold margarine or butter
1 (14 ounce) can sweetened condensed milk.
1/4 cup unsweetened cocoa
1 egg
1 tsp vanilla
1/2 tsp baking powder
1 (8 0z) bar milk chocolate candy, broken into small chunks
3/4 cup chopped nuts
Preheat oven to 350. in medium bowl, combine 1 cup flour and sugar. Cut in margarine until crumbly. Press firmly on bottom of 13x9 baking pan. Bake 15 minutes. Meanwhile, in large mixer bowl, beat sweetened condensed milk, cocoa, egg, remaining 1/4 cup flour, vanilla and baking powder. Stir in milk chocolate chunks and nuts. Spread over prepared crust. Bake 20 minutes or until center is set. Cool. Sprinkle with confectioners sugar if desired, Store tightly covered at room temperature.
